WW Recipe of the Day: Slow Cooker Barbecue Pulled Pork with Applesauce
Are you looking for an easy pulled pork loin recipe? I’ve got one for you. When I made this slow cooker pulled pork recently it was a huge hit!
The older I get, the more I appreciate my slow cooker. And quick and easy recipes like this one for pulled pork with applesauce. I use my slow cooker a couple of times a week and the shorter the ingredients list the better.

All you need is about ten minutes of prep for this simple 3-ingredient recipe.
I used an easy recipe from Fix-It and Forget-It Lightly Revised and Updated: 600 Healthy, Low-Fat Recipes for Your Slow Cooker (affiliate link), by Phyllis Good, to make these delicious pulled pork sandwiches.
Okay, you do have to shred the meat when it’s done, which takes a few more minutes. But it is so worth the effort, even for a lazy cook like me.

The original recipe calls for 3 pounds of pork, which makes 12 servings. So I cut the recipe in half.
I used a 1-1/2 pound pork loin roast I had in the freezer, half the amount of applesauce and barbecue sauce (affiliate link) and a smaller crock pot.
It turned out moist, tender and delicious.

Slow Cooker Pulled Pork Loin with Applesauce Recipe
Ingredients
- 1-1/2 pound pork loin roast visible fat removed
- 2 cups unsweetened applesauce
- 9 ounces favorite barbecue sauce (affiliate link) (1 generous cup)
Instructions
- Ideal slow cooker size: 4-Quart.
- Spray your slow cooker with non-stick cooking spray.
- Place the roast in the slow cooker.
- Spread the applesauce over the top of the roast.
- Spoon the barbecue sauce over the top, being careful not to disturb the applesauce.
- Cover and cook on low, until the meat is very tender when pierced with a fork, 4 to 6 hours,
- Remove the roast from the slow cooker.
- Shred the meat using two forks.
- Put the shredded pulled pork into a bowl. Add some of the cooking broth so the meat is juicy, but not drowning in sauce.
- If desired, serve on whole wheat buns, with coleslaw.

Will definitely make this again. I did use G Hughes sugar free hickory barbecue sauce and seasoned with granulated garlic and some liquid smoke. Delish! 🙂

Hi Annemarie, I used 2 cups of applesauce for a 1-1/2 pound roast. I would add about 1/2 cup more applesauce for each 1/2 pound of meat. The roast shouldn’t take too much longer to cook if it is only 1/2 pound more. Hope this helps. – Martha
How many more ounces of BBQ sauce for a 2lb pork loin? Excited to make this today! Does this and the extra applesauce change the nutrition value? I don’t think so? 😛

This was really outstanding! I love pulled pork, but the lighter versions I’ve tried have been bland. This was easy and delicious. The only things I did differently was add a little balsamic vinegar and Worcestershire sauce to the sauce at the end to perk it up. But this is a keeper. The whole family loved it. I made a 1 point coleslaw to accompany it. Great low point meal!

I’m not sure what you mean. I calculated points plus value only for the pork because I said there would be a lot of variability in the value of the sandwich depending on the type of bun and type and amount of coleslaw you use. Here’s a link to one of my favorite cole slaws which has asian flavors – https://simple-nourished-living.com/quick-easy-low-fat-asian-slaw-with-pineapple/. When I make creamy cole slaw at home I just use a bag of shredded cabbage/carrots and then blend it with a dressing made of equal parts of light mayonnaise and non fat Greek yogurt (about 3 tablespoons of each), thinned with a heaping tablespoon of apple cider vinegar or lemon juice. If I’m feeling ambitious I add chopped celery, apples and/or celery seed. Not sure what the Points Plus would be off the top of my head but I’m thinking not more than 1 or 2. Hope this helps.
