This slow cooker potato cauliflower soup is easy, healthy and very tasty. Then again, I don't think I ever met a potato soup I didn't like.
It must have something to do with being half Irish! This slow cooker soup is no exception.
WW Friendly Slow Cooker Potato Cauliflower Soup
You can leave your potato cauliflower soup chunky, if you are like my mom and like chunky soups. Or you can make it smooth with a potato masher (affiliate link), stick blender or traditional blender (affiliate link). I pureed about half of the soup in my blender and left the rest chunky, which seemed like a perfect compromise.

I'm new (again) to WW but wouldn't this be Simply Filling too?
Martha McKinnon
Hi Ali,
Yes, this does meet the requirements for Simply Filling. I've updated the post to reflect this. Thanks very much!!

Hello. I love the idea of being able to make this in my slow cooker! I do have one question. As I've been looking around at various recipes, some have called for the addition of lemon juice. Your recipe does not. Is there a reason why others would add lemon juice? Is it because you're cooking in the crockpot that one can skip this step?
Thanks for sharing.
Martha McKinnon
Hi Stacy, The lemon juice is an acid that would be added at the end of the recipe for a little punch of flavor. It can help to liven up a dish that seems too bland. If you want to add lemon juice I would say to add it at the end, adding a little at a time, to taste. If you add it at the beginning it can become bitter during the long slow cooking. Hope this helps.

This sounds really good, but as someone who must watch carbs, it's way too high for me. Less potatoes and more cauliflower? Don't puree some of the potatoes? I wonder if that would help?
Martha McKinnon
Hi Vicky, Yes, your ideas would definitely lower the carb count. Let us know if you find a variation you like. Warmly, Martha
