WW Soup Recipe of the Day: Low Fat Slow Cooker Spanish Potato Onion Soup
A simple soup of potatoes, onions and Spanish-influenced seasonings for the slow cooker, perfect for colder weather.
Adapted from Moosewood Restaurant Cooks at Home: Fast and Easy Recipes for Any Day (affiliate link), where it’s written as a stovetop recipe. I opted to toss everything in the crock-pot (affiliate link) instead.

A few hours later we were rewarded with this hearty and delicious soup ready and waiting for us at the end of a long day.
Served with crusty bread and a green salad, it made for a satisfying meal.

Slow Cooker Spanish Potato Onion Soup Recipe
Ingredients
- 4 medium onions, halved and thinly sliced (about 4 cups)
- 3 medium potatoes, peeled and cut into 1-inch thick half moons
- 4 cups vegetable broth (affiliate link)
- 1/4 cup dry sherry
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 large bay leaves
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Pinch of saffron
- Dash of Tabasco or pinch of cayenne (optional)
Instructions
- Ideal slow cooker size: 5-Quart.
- Combine onions, potatoes, broth, sherry and seasonings in your slow cooker.
- Cover and cook on LOW until the potatoes and onions are tender, about 4 to 6 hours.
- Remove the bay leaves.
- Taste and adjust the seasonings as desired.

what can I substitute for sherry?
Hi Elyce, I’ve never made this recipe with anything other than the sherry. I did a little online research and one suggestion that sounded good was diluted apple cider vinegar. You might want to try 2 tablespoons apple cider vinegar and 2 tablespoons water. (https://tastessence.com/sherry-substitute) Hope this helps.

I made the Spanish onion potato soup tonight and must thank you for a wonderful recipe. The spices are right on. I used the stove top to cook it and let the onions cook up bit before adding everything else. had to add garlic as well. Well balanced and with bread just delicious.
