Ingredients
- Fresh spinach, shredded – Frozen chopped spinach would also work. Just drain it and squeeze it dry before adding it to the other ingredients.
- Drained quartered artichoke hearts – Well drained marinated artichoke hearts would also work. As would chopped hearts of palm.
- Grated Parmesan cheese – Romano or asiago would be fine as well.
- Light mayonnaise – If you don’t have light mayonnaise substitute equal parts regular mayo and Greek yogurt. It’s what I usually do.
- Minced garlic – Fresh or from a jar. Granulated garlic or garlic powder would be fine. You’ll want less, 1/8 – 1/4 teaspoon.
- Onion powder – Dried minced onion would also work. Use twice as much.
- Black pepper – Fresh ground is best.
- Shredded part-skim mozzarella – any mild shredded cheese will work – Jack, Swiss, etc.
- Boneless, skinless chicken breasts – fresh or well defrosted if frozen.
How to Make Easy Healthy Spinach Artichoke Dip Topped Chicken
Step 1: Gather and prepare all ingredients
Step 2: Put the spinach and artichokes in a microwave safe bowl (affiliate link). Cover and cook for 1 minute on high.
Step 3: Add 1/4 cup Parmesan, mayonnaise, garlic, onion powder, and pepper. Stir to combine.

Step 4: Fold in the mozzarella. Set aside the dip mixture while you prepare the chicken.
Step 5: Cover the breasts with wax paper or plastic wrap. Gently pound to 1/4-inch thickness.
Step 6: Spray nonstick skillet with cooking spray. Add chicken and cook over medium-high heat.

Step 7: Cook for approximately 2-3 minutes on each side, or until browned. Top each breast with 1/4 cup of the spinach dip.

Step 8: Add 1/4 cup of water to the skillet and cover. Cook for 1-2 minutes or until chicken is done.
Step 9: Sprinkle each breast with 1 teaspoon of Parmesan cheese before serving.

Substitute fresh spinach with 1/2 cup frozen chopped spinach (thawed and squeezed dry).

Hi Joanne, If you are using frozen spinach, you’ll want to defrost it and then press out as much excess water as possible. I would then stir 1/4 cup of the well defrosted and well drained spinach with the artichokes and proceed with the recipe. No need to microwave. Hope this helps. ~Martha

Martha, I would love to try some of your recipes but you never state the sodium content and between high blood pressure and kidney disease, I need to be very careful and must monitor my salt intake. Can this problem be remedied? I notice most of the WW recipes neglect the salt factor.

Sodium is just too variable depending on kinds of products used and because many of my recipes are written to season to taste it’s impossible to accurately report a number.
