I made this fresh strawberry salsa recently to serve with grilled pork, and it turned out to be one of those simple recipes that really surprises you.

If you have only had fruit salsas from a jar, this fresh version is worth trying. It is bright, lightly sweet, a little tangy and just spicy enough to keep things interesting.

It is also a great way to take advantage of ripe, in-season strawberries—and it pairs beautifully with grilled chicken, shrimp or fish or meat.

Ingredients and Substitutions

  • Fresh Strawberries – The star of the recipe. Use ripe, in-season berries for the best flavor. You can also substitute or mix in other fruits like mango, peaches or pineapple.
  • Bell Pepper (any color) – Adds crunch and contrast. Green or yellow gives more color contrast, but any you have on hand works.
  • Scallions or Red Onion – Adds a little sharpness. Use whichever you prefer or have available.
  • Jalapeño Pepper – Provides a touch of heat. Adjust to taste or omit if you prefer a milder salsa.
  • Fresh Lime Juice or Rice Vinegar – Adds brightness and balances the sweetness.
  • Fresh Herbs (Cilantro, Basil, Parsley or Mint) – Choose what you like best. Cilantro gives a classic salsa feel, while mint or basil creates a slightly different twist.
  • Salt and Black Pepper – Enhances all the flavors.

How to Make Fresh Strawberry Salsa

  1. In a medium bowl, combine all ingredients.
  2. Start with a smaller amount of lime juice or vinegar and adjust to taste.
  3. Season with salt and pepper.
  4. Let stand at room temperature for 10–30 minutes to allow flavors to blend.
  5. Taste and adjust before serving.

Tips for Success

  • This recipe is based on Pam Anderson’s “create-your-own fruit salsa” approach—using whatever fruit you have on hand.
  • Strawberries were what I had, but this works just as well with mango, peaches, nectarines or a mix.
  • Ideally, you’d choose a contrasting color bell pepper for visual appeal, but as usual, I used what I had—and it still turned out great.

Ingredients 

  • 2 cups finely diced strawberries, or whatever fresh fruit you prefer
  • 1/2 medium yellow, red, or green pepper, finely diced
  • 3 medium scallions, sliced thin, or 1/4 cup finely diced red onion
  • 1 small jalapeno pepper, stemmed, seeded, and minced
  • 2-3 tablespoons fresh lime juice or rice wine vinegar
  • 2-3 tablespoons chopped fresh cilantro, basil, parsley, or mint leaves
  • Salt and fresh ground black pepper to taste

Instructions 

  • In a medium bowl, stir together all the ingredients, using the smaller amount of lime juice or vinegar and fresh herbs listed and a sprinkling of salt and pepper.
  • Let stand at room temperature for 10 to 30 minutes, for the flavors to blend.
  • Before serving, taste and adjust the seasonings, adding more lime juice or vinegar, herbs and salt and pepper as needed.

  1. Martha, the whole meal looks great. I would happily sit down to this. Thanks for the idea of just subbing in whatever fruit is in season.

  2. This looks really good. It could also be used to make homemade tacos – we use ground turkey breast and high fiber tortilla shells, and in summer, this would be delicious with the many fruits that are in season.
