This simple mango salsa is perfect for fish or chicken. And perfect for Weight Watchers too!

We’ve been trying to eat more fish these days. It’s good for you and makes a great simple, quick easy healthy dinner. So, I’m always on the lookout for new ways to season or sauce our fish.

Salsas are a great option because they can perk up the plainest protein while providing a serving or two of those all-important fruits and/or vegetables.

Recently this simple mango salsa recipe caught my eye. I decided to give it a try. With its beautiful peach and green hues and bright tropical flavor, it was the perfect tasty topping for simple grilled fish.

And with just 5 ingredients, you can make it in minutes! It would be delicious with chicken too.

Weight Watchers Friendly Simple Mango Salsa

Ingredients

  • Fresh mango
  • Jarred salsa verde
  • Cilantro
  • Red onion
  • Fresh lime juice

How to Make Simple Fresh Mango Salsa

Step 1: Gather and prepare all ingredients.

Step 2: Combine all the ingredients in a small bowl (affiliate link) and stir to combine. Can be served immediately, or make it ahead and refrigerate for several hours.

Recipe Notes

In addition to being delicious, this simple mango salsa is really easy to make because begin with jarred green salsa. The addition of chopped mango, cilantro, onion and lime make it special.

You will want a ripe mango when making this mango salsa. A ripe mango should give a little when you press it. The trickiest part of this simple salsa recipe is peeling and chopping the mango.

Cut the mango in two halves, along its pit. Score the flesh of each half into cubes. Flip inside out and cut the cubes from the peel into a bowl. (I find this method easier than trying to peel the skin from the fruit.)

Ingredients 

  • 1 mango, ripe but still a little firm, peeled and chopped
  • 3/4 cup jarred green salsa
  • 1/3 cup chopped cilantro or parsley
  • 1/4 cup finely chopped red onion
  • Squeeze of fresh lime juice (optional)

Instructions 

  • Stir the ingredients together in a bowl and serve, or refrigerate for several hours.
