I made this fresh corn tomato salsa to go with chicken quesadillas recently. But it would be great with chicken or fish too.

Let me tell you, this simple fresh salsa really dresses up quesadillas. It was so good, I can’t wait to make it again while fresh corn is still in season.

But in a pinch, I think it would be fine made with thawed frozen, or canned drained corn too.

Fresh Corn Tomato Salsa Recipe

This simple fresh corn tomato salsa is a great way to jazz up tacos, quesadillas or simple grilled fish or chicken.

Ingredients 

  • 1 cup corn kernels (about 1 ear)
  • 1/2 green bell pepper, seeded and diced
  • 1 medium tomato, seeded and diced
  • 3 tablespoons chopped cilantro
  • 3 teaspoons fresh lime juice, or more to taste
  • 1/2 teaspoon salt

Instructions 

  • In a medium bowl, stir together the corn, bell pepper, tomato, cilantro, lime juice and salt. Taste and adjust seasonings.
  • Set aside for at least 20 minutes to allow the flavors to blend.
