This enlightened cake is the perfect autumn treat that is as welcoming on the brunch table as it is on the dessert table. An ideal ending after a heavy meal, this low calorie dessert can be served plain, with a light dusting of confectioner’s sugar or drizzled with a light glaze.

A cup of canned pumpkin is an easy healthy addition to just about any cake recipe – including Bundt cakes, layer cakes, loaf cakes, roll cakes, cheesecakes and cupcakes.

Substituting pumpkin for some of the butter, or oil, in your favorite cake recipe lets you lower the calories and fat content while providing a healthy dose of beta carotene, fiber, vitamin C and iron.

You can even mix just dry cake mix and pumpkin together to make easy muffins, cookies and cake.

Recipe Variations

To turn this into pumpkin chocolate chip cake, add 1 cup miniature chocolate chips to the batter before baking.

Low-Fat Pumpkin Spice Cake Recipe

A very simple easy pumpkin Bundt cake that begins with a spiced cake mix. It’s a great easy low fat dessert perfect for fall.

Cook: 45 minutes
Total: 50 minutes

Ingredients 

  • Nonstick cooking spray, for coating the cake pan
  • Flour for dusting the cake pan
  • 1 package (18.25 ounces) spice cake mix
  • 1 cup canned pumpkin puree, NOT pumpkin pie mix
  • 1/4 cup canola oil
  • 3/4 cup water
  • 3 extra large eggs
  • 1 teaspoon cinnamon
  • Confectioners sugar for dusting on top

Instructions 

  • Position a rack in the center of the oven and preheat the oven to 350F degrees. Lightly mist a 12-cup Bundt pan (affiliate link) with nonstick cooking spray and then dust it with flour.
  • Place the cake mix, pumpkin, oil, water, eggs and cinnamon in a large mixing bowl (affiliate link). Beat with an electric mixer (affiliate link) on low speed until the ingredients are blended together, about 30 seconds.
  • Stop and scrape down the sides of the bowl with a rubber spatula (affiliate link).
  • Beat the mixture on medium speed for another 1 – 2 minutes longer, until the batter is smooth and thick.
  • Pour the batter into the prepared Bundt pan (affiliate link) and smooth out the top with the rubber spatula (affiliate link).
  • Bake the cake until the top springs back when you press it lightly with a finger, 42 to 48 minutes.
  • Remove the pan from the oven and place it on a wire rack to cool for 10 to 15 minutes.
  • Run a long, sharp knife around the edges of the cake and shake the pan gently to loosen it. Invert the cake onto a wire rack.
  • Let the cake cool completely, about 30 minutes more.
  • Sprinkle with confectioner’s sugar or drizzle with a little caramel sauce, if desired

  1. How many of these can be adapted to crock pot ? No working oven for over 10 years so everything has to be skillet or crock pot. thanks Mary

    1. Hi Mary,

      I don’t think any of these are easily adapted to the crock pot. I have quite a few slow cooker desserts here on the site. I would suggest taking a look at them ๐Ÿ™‚
