Tender chicken thighs slowly simmer in teriyaki sauce with sweet pineapple and green onions until juicy, flavorful, and fork tender. Serve it over rice, cauliflower rice, or alongside steamed vegetables for a simple family-friendly meal that’s perfect for meal prep too.

How to Make Slow Cooker Teriyaki Chicken with Pineapple
Step 1: Prepare the slow cooker
Lightly coat the slow cooker insert with nonstick cooking spray.
Step 2: Add the chicken
Arrange the chicken thighs in the bottom of the slow cooker.
Step 3: Make the sauce
In a bowl, stir together the pineapple, teriyaki sauce, chopped green onions, and minute tapioca (affiliate link).
Step 4: Slow cook
Pour the sauce mixture over the chicken.
Cover and cook:
- LOW: 6 to 8 hours
- HIGH: 3 to 4 hours
The chicken should be very tender and easy to shred or cut.
Step 5: Serve
Serve warm over rice, brown rice, cauliflower rice, or noodles with vegetables on the side.
Garnish with sliced green onions or sesame seeds if desired.

The minute tapioca thickens the sauce beautifully right in the slow cooker. If you prefer not to use it, simply stir together 1 to 2 tablespoons cornstarch with a little cold water at the end of cooking and add it to the sauce. Let it cook another 10 to 15 minutes until thickened.
Chicken thighs work especially well here because they stay moist and flavorful during long slow cooking. If you prefer leaner meat, chicken breasts are a great substitute.

- 1/4 cup chopped green onion (scallion)
- 2 tablespoons minute tapioca (for thickening)
Instructions
- Ideal Slow Cooker Size: 4-Quart.
- Coat the slow cooker with nonstick cooking spray.
- Place the chicken thighs in the slow cooker.
- In a bowl, stir together the pineapple, teriyaki sauce, green onion and tapioca. Pour the mixture over the chicken.
- Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, or until the chicken is fork tender.

We love this recipe, and I’ve made a couple of adaptions. I use boneless, skinless chicken breasts ( not a fan of thighs).
I also have started cooking in an electric pressure cooker on the “chicken” setting for 25 minutes.

Although I made it a tad different because I didn’t have some of the ingredients I basically made it but without the tapioca. I used fresh pineapple and cornstarch for thickening. It was really very easy to make and tasted great. I’ll definitely be keeping this recipe & making it again. I served it over Brown Basmati rice.
This is delicious. It is a keeper. The only problem is that the sauce was a little to thin for my taste.
Hi Martha, you can always thicken up the sauce by making making a cornstarch slurry of cornstarch and water and then drizzling it into the hot sauce and allowing it to cook for a few minutes, like you would for making a gravy. Hope this helps. ~Martha
