They’re creamy, fresh, and just sweet enough, with layers of juicy strawberries, graham cracker crumbs, and a lighter “cheesecake” filling. Best of all, they come together quickly with no oven required—perfect for warm days, busy schedules, or last-minute entertaining.

I first made these when heading to a friend’s house for dinner. She mentioned her kids loved strawberries, so I wanted something easy, portable, and guaranteed to please. These parfaits checked every box—and disappeared fast.

Why You’ll Love These Parfaits

  • No baking required
  • Lightened-up but still indulgent
  • Easy to make ahead
  • Perfectly portion-controlled
  • Loved by both kids and adults

Ingredients & Substitutions

  • Fresh strawberries, sliced – The star of the show. Any berries (blueberries, raspberries, blackberries) or a mix will work.
  • Sugar – Helps macerate the berries and bring out their juices. Use a zero-calorie sweetener or honey if preferred.
  • Reduced-fat cream cheese – Creates that classic cheesecake flavor.
  • Plain nonfat Greek yogurt – Adds creaminess and a protein boost. Vanilla or strawberry yogurt will also work.
  • Vanilla extract – Enhances the cheesecake flavor.
  • Confectioners’ sugar – Sweetens the filling smoothly. Use a non-calorie
powdered sugar substitute, if you prefer.
  • Frozen nonfat whipped topping, thawed – Lightens and fluffs the filling.
Light whipped cream or dairy-free alternative are other great options.
  • Graham cracker crumbs – Adds texture and that classic cheesecake base.
Crushed vanilla wafers, shortbread cookies, or granola can be used instead.

How to Make No-Bake Strawberry Cheesecake Parfaits

Step 1: Place sliced strawberries in a bowl and sprinkle with sugar. Toss gently and set aside to release their juices.

Step 2: In a mixing bowl, beat the cream cheese, Greek yogurt, vanilla, and confectioners’ sugar until smooth.

Step 4: Assemble the parfaits: Layer graham cracker crumbs, cheesecake filling, and strawberries into individual glasses or cups.

Just wanted to let you know that the vanilla extract isn’t in the directions. It’s only in the ingredients.

    1. Hi Erin,
Thanks for taking the time to let me know. I’ve added the vanilla extract to the directions. ~Martha

  2. It was exactly what I needed as I start my weight loss journey. I struggle with my sweet tooth and this hit all my nice taste buds. Even my five year old enjoyed and he is a very picky eater. Thank you!

Simple, quick, and delicious! I did not use the whipped cream – to save points. And no graham cracker crust but It was still great.

Yum-made these up just now for dessert tonight. I tasted as I layered ( you know, to ensure they were as yummy as they looked!)

This is a really great recipe! With the Greek yogurt, strawberries, and low calories, there’s nothing to even feel guilty about, and it certainly doesn’t taste low calorie! Loved it! The only change I made was adding a tiny bit more confectioner’s sugar to the cream cheese mixture. Easy to adjust to your taste. If you do put it in wine glasses or dessert cups, it looks pretty fancy. Definitely a recipe to keep!
