If you love cheesecake, but don’t love baking (or waiting… or fussing), this spoonable no-bake strawberry cheesecake might be your kind of dessert.

I still get that creamy, tangy cheesecake flavor I crave, but instead of slicing it into perfect wedges, I just scoop it into a bowl and call it good.

Honestly, it feels a little like getting away with something.

It comes together in minutes, chills while you do something else, and is cool, refreshing and just sweet enough to hit the spot without going overboard. One of those simple desserts I find myself making again and again.

Why I Love This No-Bake Strawberry Cheesecake

• No baking required
• Creamy and satisfying without feeling heavy
• Easy to make ahead
• Flexible — works with any fruit
• Feels like a treat but fits into everyday eating

Ingredients and Substitutions

  • Whipped Topping (TruWhip or similar) – Creates a light, airy texture. You can use Cool Whip or a similar product.
  • Reduced-Fat Cream Cheese – Adds that classic cheesecake flavor. Full-fat cream cheese will work, but will increase calories and Points.
  • Plain Nonfat Greek Yogurt – Lightens the mixture while adding a little protein and tang.
  • Calorie-Free Sweetener (Truvia (affiliate link) or similar) – Keeps it sweet without extra calories. You can substitute sugar or honey if preferred.
  • Vanilla Extract – Enhances the overall flavor.
  • Salt – Just a pinch helps balance the sweetness.
  • Fresh Strawberries – Adds freshness and natural sweetness. You can substitute blueberries, raspberries or peaches.
  • Graham Cracker Crumbs – Provides that classic cheesecake “crust” feel in a much lighter way. Use gluten-free graham crackers if needed.
