It would also be good with noodles or mashed potatoes and if you’re watching your carbs, either zucchini noodles or cauliflower rice.

Slow cooker beef with mushroom sauce, an easy, hearty and satisfying dish perfect for beef loving Weight Watchers

Ingredients 

  • 1-1/2 pounds lean stewing beef
  • 1 medium-large onion, chopped (about 1-1/2 cups)
  • 2 cloves garlic, minced
  • 2 cups (8 to 10 ounces) sliced mushrooms
  • 1 can (10-3/4 ounces) low fat reduced sodium cream of mushroom soup (such as Campbell’s Healthy Request)
  • 1/2 cup dry red wine, such as merlot
  • 1-1/2 tablespoons worcestershire sauce
  • 1 teaspoon Montreal Steak seasoning (optional)

Instructions 

  • Ideal slow cooker size: 4-Quart.
  • Combine all ingredients in the slow cooker.
  • Cook on LOW for 6 to 8 hours, or on HIGH for 3-1/2 to 5 hours, until beef is tender.
  • Serve over rice or noodles if desired. (Just be sure to add the associated points.)
