Lighter than quiche and incredibly simple to put together, this savory zucchini pie pairs well with anything from the grill but also stands nicely on its own as a light lunch. It’s also great served with a simple green salad on the side. If you’ve made my Impossible Bisquick Chicken & Broccoli Pie, this zucchini version follows the same easy, no-crust approach, just with a fresh, vegetable-forward twist.

What is a Bisquick Impossible Pie?

Impossible Pies first became popular in the 1970s when they appeared on the backs of Bisquick boxes. The idea was simple and a little bit magical. You mix everything together in one bowl, pour it into a baking dish, and as it bakes, the pie forms its own crust.

No rolling. No blind baking. No fuss.

Over the years, Bisquick introduced both sweet and savory versions, eventually calling them Impossibly Easy Pies. This zucchini version is a lighter, vegetable-forward take that still delivers that familiar comfort.

Ingredients & Substitutions

  • Zucchini – is the star of the pie. No need to peel it. Just slice or shred, depending on your preference.
  • Tomato – adds moisture, brightness a little acidity to balance the zucchini. Use any fresh tomato you like, chopped. Roma, vine-ripened, or cherry tomatoes all work well. You could also use 1 cup well drained diced canned tomatoes.
  • Onion – adds savory flavor. Yellow or sweet onion both work well, as would red onion. For milder flavor green onion are another good alternative.
  • Parmesan Cheese – adds saltiness and depth. Freshly grated or pre-grated both work.
  • Bisquick Baking Mix – gives the pie its “impossible” self-forming crust. You can also use Bisquick Heart Smart, Bisquick Gluten-Free, or a homemade Bisquick-style baking mix. Kodiak cakes mix (affiliate link) or a all-purpose flour with a pinch or two of baking powder will also work.
  • Milk – helps bind the batter. Any milk – dairy or nondairy – you normally use will work.
  • Eggs – provide structure and help the pie set.
  • Salt & Pepper – Season to taste.

How to Make Bisquick Impossible Zucchini Pie

Step 1: Gather and prepare all ingredients.

Step 2: Preheat oven to 400F degrees. Lightly grease a 9-inch pie dish.

Step 3: Layer the zucchini, tomatoes, onion and cheese in pie dish.

Step 4: In a medium mixing bowl, stir together the baking mix, milk, salt, pepper and egg until thoroughly combined. Pour into pie dish.

Step 5: Bake for 35 minutes, or until a knife inserted near the center comes out clean.

Step 6: Let pie stand for at least 5 minutes before cutting. Before serving, slice into 6 wedges.

  • 1 cup chopped zucchini (about 1 small)
  • 1 cup chopped tomato (about 1 large)
  • 1/2 cup chopped onion (about 1 medium)
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup Original Bisquick Baking Mix
  • 1 cup milk (I used unsweetened almond milk)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 eggs
