Looking for a quick and easy dessert recipe that takes just 15 minutes to make? You will love this Easy Eclair Icebox Cake recipe. An old-fashioned no bake icebox cake with layers of graham crackers, pudding, and chocolate icing.

It’s a cool and creamy layered dessert made lighter, perfect for hot days. A big hit with friends and family, I’ve lightened it up with sugar free pudding, low fat milk, light cool whip and fewer graham crackers.

This luscious dessert comes together quickly and easily. For best results allow at least 8 hours or overnight for it to fully chill.

  1. Martha, my husband is gluten free and I’m having trouble finding gluten free graham crackers. Is there a way that I could use graham cracker crumbs? I did find them. Thank you! I love your recipes and have quite a few that are in my rotation.

    1. Hi Anita,
I’ve never tried this with crumbs so I’m not sure how it would turn out. If you do decide to give it a go would love to know how it works for you. Another alternative might be some type of simple gluten free cookie. Hope this helps. ~Martha
