WW Recipe of the Day: Light & Easy No Bake Coconut Cream Mounds Bar Pie
This light and easy take on coconut cream pie has quickly become a family favorite. Lighter by a long-shot than your typical coconut cream pie, it has less than 200 calories a slice and a ton less fat and sugar.
Did I mention how easy it is to make? Coming together in less than 15 minutes, this quick and easy no bake pie will need a few hours in the fridge and/or freezer to set up. You may want to plan to make it a day ahead.

How to Make Light & Easy No Bake Coconut Cream Candy Bar Pie Step-by-Step
Step 1: Gather your ingredients

In a medium bowl, whisk together the instant vanilla pudding mix and milk until the mixture is smooth and thickened. Stir in 2 tablespoons of the toasted coconut and the coconut extract. Gently fold in the whipped topping being careful not to over-mix it.

Ingredients
- 4 tablespoons sweetened flaked coconut
- 1-1/3 cups low-fat milk
- 1 package (4-serving size) sugar free instant vanilla pudding
- 1-3/4 cups lite whipped topping
- 1 teaspoon coconut extract
- 1 Oreo pre-made pie crust
- 1 tablespoon sugar free chocolate syrup or ice cream topping
