Sometimes nothing satisfies quite like a good old-fashioned meatloaf dinner. This healthy meatloaf bakes up moist and flavorful thanks to plenty of finely chopped vegetables mixed right into the beef, making it lighter without sacrificing the comforting flavor we all love.
Rod, my Midwestern husband, is always especially happy when meatloaf is on the menu. Served with mashed potatoes, roasted vegetables, or green beans, it’s the kind of simple homestyle meal that never seems to go out of style.
Adapted from the Weight Watchers New Complete Cookbook (affiliate link), this lighter version quickly earned a permanent spot in our dinner rotation. It’s proof that a few simple changes can make a classic comfort food healthier without anyone feeling deprived.

Why You’ll Love This Healthy Meatloaf
- Classic comfort food – All the cozy, homestyle flavor of traditional meatloaf in a lighter recipe you’ll feel good about serving.
- Packed with veggies – Finely chopped carrots, onions, and mushrooms keep every slice moist, tender, and flavorful.
- WW friendly – Lower in Points than many traditional meatloaf recipes while still hearty and satisfying.
- Family approved – Even meat-and-potatoes lovers won’t miss the extra fat.
- Great for leftovers – Enjoy it for dinner one night and meatloaf sandwiches the next.

Ingredients and Substitutions
- Lean ground beef – I usually use 93% lean ground beef for the best balance of flavor and tenderness. Ground turkey or chicken also work well if you’d like an even lighter version.
- Onion – Adds moisture and savory flavor. Yellow, white, or sweet onions all work.
- Carrots – Finely chopped or grated carrots practically disappear into the meatloaf while helping keep it moist. Zucchini is another good option.
- Mushrooms – Add moisture and rich umami flavor. Not a mushroom fan? Finely chopped bell pepper works well instead.
- Breadcrumbs – Plain dried breadcrumbs are my usual choice, but panko or quick oats can be substituted.
- Egg – Helps bind everything together. Two egg whites can be substituted if preferred.
- Ketchup – Adds classic meatloaf flavor and makes an easy glaze. Barbecue sauce (affiliate link) creates a smokier variation.
- Seasonings – Salt, pepper, and your favorite dried herbs. Italian seasoning or chopped fresh parsley are nice additions.
Why Add Vegetables to Meatloaf?
Finely chopped vegetables do much more than boost nutrition. They help keep the meatloaf moist and tender while adding flavor and stretching the meat a little further. Once baked, they blend right into the loaf, so even picky eaters usually don’t notice they’re there.
How to Make this Healthy Meatloaf

Step 1: Prepare the vegetables
Finely chop the onion, carrots, and mushrooms. The smaller the pieces, the better they’ll blend into the meatloaf. A food processor (affiliate link) makes this step especially easy.
Step 2: Mix the meatloaf
In a large bowl, gently combine the ground beef, vegetables, breadcrumbs, egg, ketchup, and seasonings until everything is just mixed. Avoid overmixing, which can make the meatloaf dense.
Step 3: Shape the loaf
Transfer the mixture to a loaf pan (affiliate link) or shape it into a free-form loaf on a parchment-lined baking sheet (affiliate link) for crispier edges. Spread a thin layer of ketchup over the top.
Step 4: Bake
Bake until the internal temperature reaches 160°F and the meatloaf is cooked through.
Step 5: Rest and serve
Let the meatloaf rest for 5 to 10 minutes before slicing. This helps it hold together and keeps the juices inside.
Recipe Notes
Finely chopping the vegetables takes a few extra minutes, but it’s well worth the effort. They practically disappear into the meatloaf while adding moisture, flavor, and extra nutrition. If you’re short on time, a food processor (affiliate link) makes quick work of the prep.
This meatloaf also tastes even better the next day. Leftover slices are perfect for sandwiches or meal prep lunches.

Easy Variations
- BBQ Cheeseburger Meatloaf
Swap the ketchup for your favorite barbecue sauce (affiliate link) and stir in a little reduced-fat cheddar cheese. - Italian Meatloaf
Add chopped roasted red peppers, grated Parmesan, Italian seasoning, and fresh basil. - Spinach & Feta Meatloaf
Mix in well-drained chopped spinach and reduced-fat feta cheese for a Mediterranean twist. - Mushroom Swiss Meatloaf
Fold in extra sautéed mushrooms and top with reduced-fat Swiss cheese during the last few minutes of baking.
Serving Suggestions
Serve this healthy meatloaf with mashed potatoes, roasted potatoes, steamed green beans, roasted carrots, broccoli, or a crisp green salad for an easy, satisfying meal.
Leftovers also make wonderful meatloaf sandwiches on whole-grain bread with a little mustard.

Hi Martha, Could we use plain bread crumbs instead of the oats? I just cannot do oats with meat but I will if they are important to the integrity of the meatloaf (eg soaking up more juice from the veggies for instance?).
I think plain breadcrumbs would be fine as a substitute for the oats if you prefer. ~Martha

Is it 1 hour total or just 30 min? Thank you!!
Hi Mart, The total time is about 1 hour. ~Martha
This meatloaf was delicious. I didn’t have mushrooms so in place I used a half green pepper chopped. I was afraid veggies would not cook, so I cooked them all in microwave for a minute to soften. But I think this made moisture and the loaf was crumbly. Next time I won’t microwave the vegetables. I used to make meatloaf with dry Lipton onion soup mix but this is much healthier and better tasting. Thanks for the recipe
Very Tasty, I would cut the Thyme out or at lease cut it in half….. just my Opinion ?
Delicious! It’s become our favorite. Cannot find the temperature at which to bake this. Assuming 350? Sorry if its there and i missed it.
Still, love the vegetables in it, and it holds together very well.
As good or better the next day (we are left-over lovers).
Hi Lynn, yes it’s 350 (in the first line of recipe instructions). ~Martha
