I’m excited to share this light, fluffy comfort food that’s perfect for satisfying your sweet tooth. Pineapple fluff is a longtime favorite with the Weight Watchers set for good reason. It’s easy to make and delicious. A quick and easy no-cook dessert with just 3 ingredients everyone seems to love.

How to Make Skinny 3-Ingredient Pineapple Fluff

Step 1: Gather your ingredients

Can of crushed pineapple, Cool Whip, box of vanilla Jell-o and toasted shredded coconut for making pineapple fluff.

Step 2: In a medium bowl, stir together the pineapple with its juice, dry pudding mix, and whipped topping until well combined. 

Mixing together undrained crushed pineapple, sugar free vanilla instant pudding mix and cool whip in small bowl with wood spoon.

Step 3: Cover and refrigerated for at least 1 hour or until set. Serve garnished with toasted coconut if desired.

This quick and easy recipe can be modified in so many ways:

Possible additions: mini marshmallow, chopped nuts

Different fruit: fruit cocktail, chopped mandarin oranges, chopped canned peaches

Different pudding flavors: banana cream, coconut cream, pistachio, cheesecake, white chocolate

Cool Whip Substitutions: Plain greek yogurt, vanilla yogurt, cottage cheese, whipped cream

Flavor additions: coconut extract, rum extract

Ingredients 

  • 20 ounces canned crushed pineapple, undrained
  • 1.1 ounces sugar free instant vanilla pudding mix, (4-serving size)
  • 1 cup light whipped topping, (I used cool whip light)
  • 2 tablespoons toasted unsweetened coconut, optional

Instructions 

  • In a medium bowl, stir together the pineapple with its juice, dry pudding mix, and whipped topping until well combined. Cover and refrigerate for at least 1 hour or until set. 
  • Serve sprinkled with toasted coconut on top, if desired.

    I used cheesecake pudding and inadvertently used the entire container of whipped cream. Added walnuts and marshmallows. This was totally yummy.
