I’m always excited when I find a slow cooker chicken recipe that’s both simple and flavorful. This Greek-inspired crockpot chicken is one of my favorites. Tender chicken simmers with tomatoes, garlic, oregano, and a splash of broth, then gets finished with briny Kalamata olives and creamy feta cheese. The result? A light yet satisfying dish packed with Mediterranean flavor. It’s easy enough for a weeknight dinner but delicious enough to share with guests—and it also happens to be Weight Watchers friendly.

Ingredients & Substitutions
- Chicken – I used bone-in, skinless chicken breasts, but thighs, drumsticks, or even boneless skinless chicken will work.
- Garlic – Fresh minced is best, but granulated garlic works fine.
- Oregano – Dried oregano keeps it simple, or swap in Italian seasoning. Fresh oregano is even better.
- Tomatoes – Cherry or grape tomatoes sliced in half, or substitute canned diced tomatoes. Sun-dried tomatoes also add great flavor.
- Broth – Chicken broth is classic, but Greek or Italian dressing makes a flavorful substitute.
- Kalamata olives – Briny and rich, but any black or green olives will work.
- Feta cheese – Crumbled feta is traditional, though Parmesan or goat cheese would also be delicious.

How to Make Slow Cooker Greek Chicken, Step-by-Step
Step 1: Gather and Prep your ingredients

Step 2 – Load the Slow Cooker
Place chicken in the bottom of the slow cooker. Top with garlic, oregano, halved tomatoes, and broth.

Step 3 – Cook Until Tender
Cover and cook on LOW for 4–6 hours, checking toward the early end of the range.
Step 4 – Finish with Feta and Olives
Top with the crumbled feta cheese and olives. Cover and cook another 15 to 30 minutes, until hot.
Step 5 – Serve and Enjoy
Spoon the flavorful sauce over the chicken and serve with your favorite sides.

Recipe Notes & Tips
- Don’t skip LOW: Today’s slow cookers run hotter. Cooking chicken on HIGH often leads to dry, rubbery meat.
- Slow cooker size matters: Recipes work best when the pot is ½–¾ full. Using too large a slow cooker can cause overcooking.
- Make it your own: Try adding sliced bell peppers or zucchini for extra veggies.

Slow Cooker Greek Chicken with Feta and Tomatoes
Ingredients
- 4 pounds bone-in chicken breasts (skinned), (You could also use legs, thighs and/or a combination if you prefer)
- Salt & Black Pepper
- 2 cloves garlic, finely chopped
- 1/2 teaspoon dried oregano
- 1 pint cherry tomatoes or grape tomatoes, sliced in half
- 1/2 cup chicken broth, (I substituted Greek salad dressing)
- 1/2 cup chopped pitted Kalamata olives
- 1/2 cup crumbled feta cheese
Instructions
- Ideal Slow Cooker Size: 4- to 6-quart. I used my 4-quart
- Spray the insert of the slow cooer with nonstick cooking spray.
- Season chicken with salt and pepper to taste.
- Place the seasoned chicken pieces in the slow cooker, overlapping slightly.
- Sprinkle the chopped garlic and oregano over the top. Add the sliced tomatoes and broth.
- Cover and cook on low for 4-6 hours, or until the chicken is very tender when pierced with a fork.
- Add the olives and cheese. Cover and cook on low for 15 – 30 minutes longer, or until hot. Serve hot.
Notes

- I used Greek dressing in place of the half cup of chicken broth because it is what I had available.
- The recipe calls for Kalamata olives but substitute whatever green olives or black olives you prefer.
- Italian seasoning would be a nice substitution for dried oregano.
- Granulated garlic works well in place of cloves garlic.
- I used skinless bone-in chicken breasts. Bone-in chicken thighs, chicken legs or even boneless skinless thighs would also work. If you use boneless skinless chicken breast halves I’d shorten the cooking time to 3-4 hours or maybe even less.
- I used crumbled feta cheese but a block of feta cheese (crumbled of course), parmesan cheese or goat cheese would also be delicious.
- I used sliced fresh grape tomatoes. Sun-dried tomatoes would also work
- I wouldn’t suggest cooking this great recipe for chicken on high heat. LOW is the way to go when cooking chicken in the crock-pot.

Can I use boneless skinless chicken breasts?
Yes, but reduce cooking time to 3–4 hours on LOW to prevent overcooking.
What if I don’t like olives?
Simply leave them out or replace with artichoke hearts or roasted red peppers.
Can I make this ahead?
Yes! Assemble ingredients in the slow cooker insert the night before, refrigerate, and start cooking the next day.
Can I cook it on HIGH?
I don’t recommend it. Chicken in the slow cooker turns out best when cooked low and slow.

This was wonderful! So simple and flavorful. My husband enjoyed his portion atop leftover scalloped potatoes. Next time ( and there will be one), I plan to try shredding the chicken, returning it to the pot, and then stirring in the olives and Feta; this will add even more depth to each chicken bite.
