WW Recipe of the Day: Slow Cooker Cabbage Roll Casserole
I’ve always loved cabbage rolls. But am way too lazy to make them.
The solution?
An easy-peasy slow cooker cabbage roll casserole that is also Weight Watchers friendly.
You get all the flavors of cabbage rolls in this slow cooker cabbage casserole with a LOT less effort.

I’ll admit that it’s not all that much to look at. But, looks can be deceiving!
Simple and delicious, I’ll definitely be making this slow cooker cabbage casserole again.
What is Coleslaw Mix Made Of?
Coleslaw mix is a prepackaged mix of shredded cabbage (and usually carrot) which is sold in the produce section of most markets in with the other bags of lettuces and greens. If a store-bought mix isn’t your bag, just thinly slice your choice of green or red cabbage, and/or carrots to make your own.

Recipe Notes
Using bagged coleslaw mix, keeps the preparation of this soup really quick. You can always shred your own, if you prefer, either with a knife or the food processor (affiliate link).
I used lean ground beef to make this easy crockpot casserole. You could easily use lean ground turkey if you prefer.
Additional seasonings: I kept the seasonings super simple. If you want to bump up the flavor consider adding a splash or two of Worcestershire sauce and/or smoked paprika instead of the regular kind.

Slow Cooker Cabbage Roll Casserole Recipe
Equipment
Ingredients
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 5 cups coleslaw mix
- 1/2 cup uncooked, converted rice (I used Uncle Ben’s)
- 1/4 cup water
- 2 teaspoons paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 can (14 – 15 ounces) Italian-style tomato sauce
Instructions
- Ideal slow cooker size: 4-Quart
- Grease the inside of the slow cooker.
- In a large skillet (affiliate link), cook the beef and onion, stirring occasionally, until the beef is no longer pink. Drain off any grease.
- Scrape the beef and onion mixture into the slow cooker.
- Add the remaining ingredients and stir to combine. (The cooker will be full, but the cabbage will shrink a lot during cooking.)
- Cover and cook on LOW for 4 to 6 hours, or until the cabbage is tender.

I am half Slovak. My grandmother was 100% Slovak from near Prague, and my mother married Welsh. Both of them made Halubkis. I tried, but never could do then justice. Then, I tried these ‘Pigs in Blankets, according to this recipe. To me, it’s like making Halubkis without all the work of rolling them into the blankets. I pretty much followed this recipe, but used Rotel’s original tomato sauce, and since it’s only 10 ounces, i used 2 cans. I can see making all kinds of variations, but why try to make a better mousetrap, when you have this recipe. It’s my favorite recipe, easy to make, and the slow cooker does its magic
Added a bag of frozen mixed vegetables and a can of italian style diced tomatoes. Recipe dried out, so the additional tomatoes and some additional water helped keep it moist. Otherwise, very good!
Hi Jess, love you additions! Thanks for sharing!! ~Martha
My neighbor lost this link and wants this recipe
Could this be cooked on top of the stove instead of crockpot?
Hi Susan, If I were to do it I would cook it in the oven, but stovetop should work too.
Very easy and so so good!
All I can say is, “OH MY GOODNESS THIS IS GOOD!” Thank you for a simple, nourishing and DELICIOUS dinner. I’m thrilled with this recipe.
By the way, could I substitute minute rice for the Uncle Ben’s converted?
Hi Erica, I haven’t tried it with minute rice, which will cook a lot faster and might become mushy. ~Martha
Yum. …. will make this many times over! What’s great ….. it stands alone for an easy dinner. Add a salad and it’s a filling meal! Very satisfying and so easy to make!!! Thanks so much for sharing
A good, simple recipe. I added Montreal Steak seasoning, as well as, Italian seasoning. It’s not a meal you can leave in the crock pot all day while you are at work, or it will dry out. I ended up adding the whole bag of slaw mix and a little extra water. It turned out great!
I love this casserole!! Quick and easy, and the taste is delicious. I eat one serving at lunch and it’s so satisfying until dinner! Great way to stay on track with my points!!!! THANK YOU SO MUCH FOR SHARING??
I loved it with ground turkey but I am sure lean ground beef will be great too. A great and simple dinner and lunch and not a lot of points either.
