WW Recipe of the Day: Slow Cooker Cabbage Roll Casserole

I’ve always loved cabbage rolls. But am way too lazy to make them.

The solution?

An easy-peasy slow cooker cabbage roll casserole that is also Weight Watchers friendly.

You get all the flavors of cabbage rolls in this slow cooker cabbage casserole with a LOT less effort.

I’ll admit that it’s not all that much to look at. But, looks can be deceiving!

Simple and delicious, I’ll definitely be making this slow cooker cabbage casserole again.

What is Coleslaw Mix Made Of?

Coleslaw mix is a prepackaged mix of shredded cabbage (and usually carrot) which is sold in the produce section of most markets in with the other bags of lettuces and greens. If a store-bought mix isn’t your bag, just thinly slice your choice of green or red cabbage, and/or carrots to make your own.

Recipe Notes

Using bagged coleslaw mix, keeps the preparation of this soup really quick. You can always shred your own, if you prefer, either with a knife or the food processor (affiliate link).

I used lean ground beef to make this easy crockpot casserole. You could easily use lean ground turkey if you prefer.

Additional seasonings: I kept the seasonings super simple. If you want to bump up the flavor consider adding a splash or two of Worcestershire sauce and/or smoked paprika instead of the regular kind.

Slow Cooker Cabbage Roll Casserole Recipe

All the flavors of cabbage rolls in an easy, light and delicious slow cooker cabbage casserole. It’s a family favorite!

Ingredients 

  • 1 pound lean ground beef
  • 1/2 cup chopped onion
  • 5 cups coleslaw mix
  • 1/2 cup uncooked, converted rice (I used Uncle Ben’s)
  • 1/4 cup water
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (14 – 15 ounces) Italian-style tomato sauce

Instructions 

  • Ideal slow cooker size: 4-Quart
  • Grease the inside of the slow cooker.
  • In a large skillet (affiliate link), cook the beef and onion, stirring occasionally, until the beef is no longer pink. Drain off any grease.
  • Scrape the beef and onion mixture into the slow cooker.
  • Add the remaining ingredients and stir to combine. (The cooker will be full, but the cabbage will shrink a lot during cooking.)
  • Cover and cook on LOW for 4 to 6 hours, or until the cabbage is tender.

Next time I’ll bulk up this easy cabbage roll casserole even more with another cup or two of cole slaw mix.

  1. I just made this using venison instead of ground beef, adding the extra cups of cabbage like you suggested. It was delicious!

  2. Hi, I’m in New Zealand and am just wondering what is meant by uncooked converted rice please. We have the Uncle Ben brand here and can get pouches of rice that cook in the microwave for 90 seconds. Is this what is meant?

    1. Hi Lynne, you want the Uncle Ben brand that is in a box, NOT the kind that cooks in 90 seconds. Hope this helps.

      1. Thank you. Can I just clarify please – are you meaning ordinary uncooked rice? It is the word ‘converted’ that has me confused – I’ve never heard that used with rice before.

    I made this yesterday & it’s really yummy.
    I took your suggestion, Martha, and added extra cabbage. Other than that, the only change I made was to use ground turkey in place of ground beef. Thanks for the motivating emails and the lovely, uncomplicated recipes. I appreciate it!
