WW Recipe of the Day: Skinny Slow Cooker Pumpkin Spice Latte
I made this low fat Pumpkin Spice Latte for a special breakfast treat Saturday morning.
WW Friendly Low Fat Pumpkin Spice Latte
There was a time when I "treated myself" to a Starbucks Grande Non Fat Pumpkin Spice Latte most every day of the week from October through the new year.
And then wondered why all my clothes were so tight come January.
I was completely oblivious to the fact that this little NON-FAT indulgence packed a whopping 330 calories and *9 Weight Watchers PointsPlus (*16 SmartPoints)!

Slow Cooker Low Fat Pumpkin Spice Lattes
I adapted the recipe for this skinny slow cooker pumpkin spice latte from Fix-It and Forget-It New Cookbook: 250 New Delicious Slow Cooker Recipes (affiliate link) by Phyllis Good.
I made a half batch which was enough for 3 (1-cup) servings. I used powdered non-fat milk, which prevented me from having to go to the grocery store for milk.
I think I read somewhere that it works better in the slow cooker too.
I definitely plan on treating myself to a few more of these skinny slow cooker pumpkin spice lattes this fall.

If you like to make your own puree at home, you could always substitute fresh pumpkin puree for the canned.

Skinny Slow Cooker Pumpkin Spice Latte Recipe
Ingredients
- 2 cups non-fat milk (I used dry milk powder and water according to the package directions)
- ¾ cup strong brewed coffee, decaf or regular
- ¼ cup canned pumpkin puree
- 1 tablespoon sugar
- 1 tablespoon brown sugar
- 2 teaspoons vanilla extract
- ¼ teaspoon ground cinnamon
- ⅛ teaspoon ground cloves
- ⅛ teaspoon ground nutmeg
- pinch of ground ginger
Instructions
- Ideal slow cooker size: 1-½-Quart.
- Combine the milk, coffee, pumpkin, sugar, brown sugar, vanilla, cinnamon, cloves, nutmeg and ginger in your slow cooker.
- Whisk until the mixture is well blended.
- Cover and heat on LOW for 2 hours until steaming hot.
- Whisk again before serving because the pumpkin sinks to the bottom and needs to be incorporated.
- Ladle into mugs.
- Dollop with whipped cream and sprinkle with cinnamon, if desired.
