WW Recipe of the Day: Easy Slow Cooker Rosemary Chicken & Potatoes
The inspiration for this recipe comes from an old packet of McCormick Recipe Inspirations Spices I found in the cupboard here in the cabin. I converted an oven recipe into one for the slow cooker and was really happy with how tasty it turned out for such little effort.
The spice packet included dried garlic, paprika, rosemary, salt and pepper. Substitute whatever herb and spice combination you like best.

Easy Slow Cooker Chicken & Potatoes Recipe
Ingredients
- 4 bone-in chick thighs, skin removed (about 1-1/2 pounds)
- 1.5 pounds red potatoes, cut into 1-inch cubes
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried rosemary, crumbled
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Ideal Slow Cooker Size: 4- to 5-Quart
- Place the potatoes and chicken in the slow cooker.
- Add the spices and toss well to coat the chicken and potatoes.
- Cover and cook on LOW until the chicken is done and the potatoes are tender, 6 to 8 hours.

Made this last night, with a few adds/changes, and loved it! I added some chopped onion and mushrooms, and also hot Hungarian paprika instead of sweet paprika. The other change was to use 1/2 sweet potatoes and 1/2 red potatoes. Amped up the spices and rosemary a bit to accommodate the extra adds and it was delicious and satisfying!

Do you add any liquid to the pot? If not how do the potatoes cook?
No, I didn’t add any extra liquid. There’s enough liquid from the chicken and potatoes when cooked in the closed environment of a slow cooker. Hope this helps. – Martha
Will using chicken breasts instead of thighs change the cooking time at all?
Hi Beth, yes in my experience, chicken breasts cook faster than thighs and can dry out if cooked too long. The actual time will depend on several variables including size of the chicken breasts, size of your slow cooker and how hot your slow cooker cooks. Mine are usually done in 3 to 4 hours. You’ll want to cut the potatoes in small pieces so they are done at the same time as your chicken. Hope this helps.
