If you’ve ever enjoyed a buckeye candy, you are going to want to give these crispy bon bons a try. Buckeyes are like peanut butter balls, but rather than being completely covered in chocolate, the peanut butter fudge confections are only partially dipped in melted chocolate, leaving a circle of peanut butter visible.

These easy no-bake bons bons have much less sugar than traditional buckeyes, and the the crispy rice cereal adds a pleasant lightness and crunch.

How to Make Crispy Chocolate Peanut Butter Bon Bons, Step-by-Step

Step 1: Gather and prepare all ingredients.

Ingredients including crispy rice cereal, mini chocolate chips, Truvia brown sugar, light cream cheese, vanilla and jar of peanut butter.

Step 2: Place a piece of wax paper or silicone liner on small baking sheet (affiliate link) and set aside.

Step 3: In a mixing bowl, add peanut butter, Truvia Baking Blend (affiliate link), light cream cheese, Truvia Brown Sugar Blend (affiliate link) and vanilla. Cream together with an electric mixer (affiliate link) until thoroughly mixed and combined.

Step 4: Carefully fold in the crispy rice cereal.

Step 7: Cover half of each bon bon by dipping in the melted chocolate, or simply drizzle chocolate over bon bons.

Ingredients 

  • 1/2 cup creamy peanut butter no sugar added
  • 2 tablespoons Truvia Baking Blend (affiliate link)
  • 3 tablespoons light cream cheese
  • 1 tablespoon Truvia Brown Sugar Blend (affiliate link)
  • 1/2 teaspoon vanilla extract
