Weight Watchers Recipe of the Day: Healthy Halloween Candy Corn Fruit Cups
Here's a light and healthy Halloween treat with just 4 ingredients you can make in minutes.
How great is that?
I've never been a fan of candy corn. If it were the only Halloween candy option I'd never have to worry about overindulging.
But candy corn screams HALLOWEEN and provides the inspiration for all kinds of sweets including cookies, cupcakes, and even Rice Krispies Treats.
It's rare that you see something as light, healthy and easy as these clever Healthy Halloween Candy Corn Fruit Parfaits. As soon as I saw them posted on Weight Watchers Facebook page I knew I wanted to share them here.
Skinny on Healthy Halloween Candy Corn Fruit Parfait
You just layer pineapple tidbits and mandarin oranges in clear jars or glasses, dollop them with whipped topping and garnish with a candy corn.
If you don't like pineapple and/or mandarin oranges, just substitute whatever yellow and orange fruit combination you like best.
Since I used canned fruit packed in juice, the only ingredients with points are the whipped topping and candy corn.

Weight Watchers Halloween Candy Corn Fruit Parfait Recipe
Ingredients
- 1-⅓ cups canned pineapple tidbits, drained
- 1-⅓ cups mandarin oranges, drained
- 8 tablespoons whipped topping (I used Reddi-Wip)
- 4 candy corn candies
Instructions
- Layer ⅓ cup pineapple and then ⅓ cup mandarin oranges in each of 4 clear glass jars or glasses.
- Top each with 2 tablespoons of whipped topping.
- Garnish with a candy corn.
