Looking for an easy way to use up all those Thanksgiving leftovers?

Why not turn them into a Thanksgiving slow cooker leftovers soup?

That’s what I did about a week or so ago.

I took what remained of the slow cooker turkey breast, stuffing, mashed potatoes and gravy sitting in the fridge.

Tossed them into my slow cooker.

Added a package of mixed vegetables.

And stirred in some chicken broth.

It worked!

After several hours on LOW, I was rewarded with a bowl of this steamy, tasty, satisfying slow cooker Thanksgiving leftovers soup.

It may not be the prettiest soup ever, but we all thought it was pretty darned good.

If you are like me and hate wasting leftovers, why not experiment with turning them into your own slow cooker leftovers soup?

Slow cooker Thanksgiving leftovers soup, a, tasty, satisfying concoction of Thanksgiving leftovers that couldn’t be easier.
Recipe type: Soup
Serves: 7
  • 1 cup shredded turkey
  • 3 cups stuffing
  • 1 cup mashed potatoes
  • 1 cup gravy
  • 4 cups chicken broth
  • 3 cups frozen mixed vegetables
  1. I used my 4-Quart slow cooker.
  2. To your slow cooker, add the turkey, stuffing, mashed potatoes, gravy, chicken broth and vegetables.
  3. Stir to combine.
  4. Cover and cook on LOW 4 to 6 hours to allow flavors to meld and stuffing to almost melt away.

    I LOVE this recipe! We always have ‘leftover hash’ – casserole using the leftover turkey, stuffing, potatoes and grave. It’s just SO heavy! I love the idea of thinning it out / lightening it up by adding broth and then vegetables…Thank you for the recipe!!!

    I haven’t tried it yet, but based on my families love for the ‘leftover has’ I am guessing this willbe a 5STAR recipe at our house!

    About 30 minutes before serving I stir in a can of ‘whole-berry’ cranberry sauce when I make a soup like this. (But i imagine that does a number on the calorie count!)
