Looking for an easy way to use up all those Thanksgiving leftovers?
Why not turn them into a Thanksgiving slow cooker leftovers soup?
That’s what I did about a week or so ago.
Tossed them into my slow cooker.
Added a package of mixed vegetables.
And stirred in some chicken broth.
After several hours on LOW, I was rewarded with a bowl of this steamy, tasty, satisfying slow cooker Thanksgiving leftovers soup.
It may not be the prettiest soup ever, but we all thought it was pretty darned good.
If you are like me and hate wasting leftovers, why not experiment with turning them into your own slow cooker leftovers soup?
I would love to hear how it turns out.
- 1 cup shredded turkey
- 3 cups stuffing
- 1 cup mashed potatoes
- 1 cup gravy
- 4 cups chicken broth
- 3 cups frozen mixed vegetables
- I used my 4-Quart slow cooker.
- To your slow cooker, add the turkey, stuffing, mashed potatoes, gravy, chicken broth and vegetables.
- Stir to combine.
- Cover and cook on LOW 4 to 6 hours to allow flavors to meld and stuffing to almost melt away.
