How to Make Everything but the Bagel Chips, Step-by-Step
Step 1: Gather and prepare all ingredients.

Step 2: Preheat oven to 350F degrees. Line a baking sheet (affiliate link) with parchment paper. (I used a pizza stone (affiliate link) in my toaster oven.)
Step 3: Whisk egg white in a small bowl (affiliate link) until frothy.

Step 4: Place tortillas on a flat surface and brush with egg white.

Sprinkle 3/4 teaspoon seasoning evenly over each tortilla. Cut each tortilla into 8 wedges.

Step 5: Place wedges on prepared pan and bake until lightly golden brown, about 15 minutes. (I did mine in two batches).
Step 6: Allow chips to cool before serving.

Tips for Success

- Spread them out. Chips that overlap won’t crisp up properly. If your pan is small, bake in two batches. It’s worth the extra few minutes.
- Watch the oven in the last few minutes. Every oven runs a little differently. Start checking at 12 minutes—you want golden and crisp, not dark.
- Let them cool. I know it’s tempting to eat them straight off the pan. Resist. They get significantly crispier as they cool, and the flavors settle.
- Season generously. ¾-teaspoon per tortilla sounds precise, but don’t be shy—the seasoning is what makes these special.

Yes—and honestly, I prefer them that way. Air fry at 350°F for 5–7 minutes, checking at the 5-minute mark. Work in batches so they’re not overlapping. The result is slightly more even browning and a great crunch. No parchment needed.
What if I can’t find Xtreme Wellness or Mission Carb Balance tortillas?
Any low carb, high fiber tortilla will work. Just check the nutrition label—you want something in the 50–70 calorie range per tortilla to keep the points low. Standard flour tortillas will work in a pinch but will be higher in calories and points.
I can’t find Everything But the Bagel seasoning. Can I make my own?
Absolutely. Mix together sesame seeds, black sesame seeds, poppy seeds, dried minced garlic, dried minced onion, and flaky sea salt. There’s no single “right” ratio—start equal parts and adjust to taste. It keeps well in a small jar.
Can I use a whole egg instead of just the egg white?
I’d stick with just the egg white. The yolk adds fat and can make the chips taste a little eggy. The white is what you want—it’s flavorless and gives you the crunch without any off notes.
