Sometimes nothing satisfies quite like a good old-fashioned meatloaf dinner. This healthy meatloaf bakes up moist and flavorful thanks to plenty of finely chopped vegetables mixed right into the beef, making it lighter without sacrificing the comforting flavor we all love.
Rod, my Midwestern husband, is always especially happy when meatloaf is on the menu. Served with mashed potatoes, roasted vegetables, or green beans, it’s the kind of simple homestyle meal that never seems to go out of style.
Adapted from the Weight Watchers New Complete Cookbook (affiliate link), this lighter version quickly earned a permanent spot in our dinner rotation. It’s proof that a few simple changes can make a classic comfort food healthier without anyone feeling deprived.

Ingredients and Substitutions
- Lean ground beef – I usually use 93% lean ground beef for the best balance of flavor and tenderness. Ground turkey or chicken also work well if you’d like an even lighter version.
- Onion – Adds moisture and savory flavor. Yellow, white, or sweet onions all work.
- Carrots – Finely chopped or grated carrots practically disappear into the meatloaf while helping keep it moist. Zucchini is another good option.
- Mushrooms – Add moisture and rich umami flavor. Not a mushroom fan? Finely chopped bell pepper works well instead.
- Breadcrumbs – Plain dried breadcrumbs are my usual choice, but panko or quick oats can be substituted.
- Egg – Helps bind everything together. Two egg whites can be substituted if preferred.
- Ketchup – Adds classic meatloaf flavor and makes an easy glaze. Barbecue sauce (affiliate link) creates a smokier variation.
- Seasonings – Salt, pepper, and your favorite dried herbs. Italian seasoning or chopped fresh parsley are nice additions.
Why Add Vegetables to Meatloaf?
Finely chopped vegetables do much more than boost nutrition. They help keep the meatloaf moist and tender while adding flavor and stretching the meat a little further. Once baked, they blend right into the loaf, so even picky eaters usually don’t notice they’re there.
How to Make this Healthy Meatloaf

Step 1: Prepare the vegetables
Finely chop the onion, carrots, and mushrooms. The smaller the pieces, the better they’ll blend into the meatloaf. A food processor (affiliate link) makes this step especially easy.
Step 2: Mix the meatloaf
In a large bowl, gently combine the ground beef, vegetables, breadcrumbs, egg, ketchup, and seasonings until everything is just mixed. Avoid overmixing, which can make the meatloaf dense.
Step 3: Shape the loaf
Transfer the mixture to a loaf pan (affiliate link) or shape it into a free-form loaf on a parchment-lined baking sheet (affiliate link) for crispier edges. Spread a thin layer of ketchup over the top.
Step 4: Bake
Bake until the internal temperature reaches 160°F and the meatloaf is cooked through.
Step 5: Rest and serve
Let the meatloaf rest for 5 to 10 minutes before slicing. This helps it hold together and keeps the juices inside.
Recipe Notes
Finely chopping the vegetables takes a few extra minutes, but it’s well worth the effort. They practically disappear into the meatloaf while adding moisture, flavor, and extra nutrition. If you’re short on time, a food processor (affiliate link) makes quick work of the prep.
This meatloaf also tastes even better the next day. Leftover slices are perfect for sandwiches or meal prep lunches.

Easy Variations
- BBQ Cheeseburger Meatloaf
Swap the ketchup for your favorite barbecue sauce (affiliate link) and stir in a little reduced-fat cheddar cheese. - Italian Meatloaf
Add chopped roasted red peppers, grated Parmesan, Italian seasoning, and fresh basil. - Spinach & Feta Meatloaf
Mix in well-drained chopped spinach and reduced-fat feta cheese for a Mediterranean twist. - Mushroom Swiss Meatloaf
Fold in extra sautéed mushrooms and top with reduced-fat Swiss cheese during the last few minutes of baking.
Serving Suggestions
Serve this healthy meatloaf with mashed potatoes, roasted potatoes, steamed green beans, roasted carrots, broccoli, or a crisp green salad for an easy, satisfying meal.
Leftovers also make wonderful meatloaf sandwiches on whole-grain bread with a little mustard.

Healthy Meatloaf (Weight Watchers Friendly)
Equipment
Ingredients
- 2 teaspoons canola oil
- 1 cup finely chopped white mushrooms
- 1 cup finely chopped onion
- 1 carrot, peeled and finely chopped
- 1 stalk celery, finely chopped
- 1 pound lean ground beef (7% or less)
- 1/2 cup quick cooking or old-fashioned oats (not instant)
- 2 large egg whites (I use 1 whole egg instead)
- 3 tablespoons ketchup (plus more for brushing on top)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme leaves (not ground thyme)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder (or 1 teaspoon minced fresh)
Instructions
- Preheat oven to 350F degrees. Spray a 4-1/2 x 8-1/2-inch loaf pan (affiliate link) with cooking spray.
- Heat the oil in a large nonstick skillet (affiliate link) set over medium heat. Add the mushrooms, onion, carrot, and celery. Cook, stirring frequently, until the onion is softened, about 5 minutes. Transfer this mixture to a large bowl.
- Add the remaining ingredients to the vegetables in the bowl and mix well. Press the meatloaf into the prepared loaf pan.
- Bake the meatloaf for 30 minutes. Brush additional ketchup on top of the loaf, if desired.
- Cook until done, an additional 30 to 45 minutes. (An instant read thermometer inserted into the center of the loaf should read 160F degrees.)
- Remove from the oven and let rest for about 5 minutes. Cut into 8 slices.

Add 10 ounces thawed frozen chopped spinach (drained and squeezed dry) and 1/2 cup reduced-fat crumbled feta cheese to the meat loaf mixture. BBQ Cheeseburger Meatloaf:
Add 1/2 cup shredded reduced fat cheddar cheese to the meat loaf mixture and substitute favorite BBQ sauce for the ketchup. Italian Meatloaf with Roasted Red Peppers:
Add 1/4 cup chopped roasted red peppers (not packed in oil) to the mushroom mixture in step 1. Add 1/2 cup grated Parmesan cheese and 1/4 cup chopped fresh basil to the meatloaf mixture.

This is a great recipe because of so much flavor. Made the Italian variation as published, and it was so good that I then made it with ground turkey (substituting for beef). Used half the mixture for a small (2 serving) meatloaf, and the other half as 15 small meatballs sauteed to combine with marinara sauce as a topper for spaghetti squash. It says 4 servings, but it also says cut into 8 slices. So, does that mean that 2 slices equals one serving and, therefore, 4 SP ? Each slice is 2 SP ???

I don’t really know much about the Dash Diet, but I believe it is based on a diet focusing on fruits and vegetables, lean proteins and low fat dairy, which is exactly what Weight Watchers encourages. Hope this helps.
