- To prep ahead: Place the shredded apple in a small airtight container, cover and refrigerate. If desired add a few drops of lemon juice to prevent browning. Whisk the egg and sugar in the mug. Cover and refrigerate until ready to use. Keep the pancake separate in a small airtight container.

Martha, I love this recipe.! I have made it several times using Kristen pancake mix which is only 1 point and swerve which is zero points so I have a breakfast for only 1 point. I also have substituted blueberries, strawberries and raspberries all are good,, the blueberries are my favorite. Today I used canned pumpkin (1/2 cup) and pumpkin pie spice. It was amazing, like a pumpkin custard. Thought some of your followers might enjoy this for the holidays.
