WW Recipe of the Day: How to Make Slow Cooker Roasted Garlic
I love roasted garlic. It's so nutty, creamy and sweet.
Roasted garlic is a deliciously easy way to add incredible flavor to a variety of dishes with minimal calories, fat and Weight Watchers Points.
Slow Cooker Roasted Garlic Recipe Notes
Mix it with a little light cream cheese and spread it on whole grain crackers for a quick and easy appetizer or snack.
Stir it into soup, pasta, mashed potatoes or your favorite vegetable dip.
Or combine it with non-fat Greek yogurt and use it to top baked potatoes.
Up until now, I've always roasted garlic in the oven.
So, I decided it was time to give slow cooker roasted garlic a try.
Most recipes tell you to drizzle the garlic with olive oil before roasting, but since the slow cooker locks in moisture, I decided to skip it and save the calories.
The results were better than I expected.
It's nice to know that when the temperatures heat up around here and it gets too hot to even think about turning on the oven, I can make slow cooker roasted garlic without heating up the entire house.
How Many Calories and WW Points in this Slow Roasted Garlic?
According to my calculations, each serving (about 10 roasted garlic cloves without oil) has about 45 calories and:

How to Make Slow Cooker Roasted Garlic
Step 1: Assemble your fresh garlic bulbs.
Step 2: Cut ¼" to ½" off the top of the garlic bulbs.
Step 3: Remove excess skins and place freshly cut garlic bulbs on sheet of tin foil.
Step 4: Fold up foil tightly around bulbs.
Step 5: (Optional) Don't waste the garlic that was cut from the top. Remove these cloves from the papery skins and add to another piece of foil and wrap up cloves tightly.
Step 6: Place foil packets in bottom of crock pot, cover and cook on LOW until garlic becomes soft and caramelized, about 4 to 5 hours (time will vary depending on how much garlic and size of your slow cooker).
Step 7: Once the garlic cools, unwrap it from the foil, squeeze to remove from cloves from skins (or us a small knife) and enjoy your warm garlic.

Slow Cooked Roasted Garlic Recipe
Ingredients
- 3 heads of garlic
Instructions
- Ideal Slow Cooker Size: 1- to 2-Quart.
- Using a knife, cut off ¼- to a ½-inch of the top of each head of garlic to expose the individual cloves. Remove some of the papery skins.
- Wrap tightly in aluminum foil and place in your slow cooker.
- Cover and cook on LOW for 4 to 5 hours until tender. (The cloves should feel soft when pressed and should be easy to pierce with a sharp knife.)
- Remove the garlic from the slow cooker and let it cool enough so you can touch it without burning yourself then squeeze the roasted garlic cloves out of their skins.

One thing I really like about crock pot cooking, it is so easy to take outside and set up on a deck or patio. It keeps the kitchen from getting hot in the summer or smelling of garlic. I like the smell of garlic, but not on my clothes. I will definitely try this.

What a great idea! We have a Creamy Roasted Garlic Vinaigrette that is amazing and I love this option for roasting the garlic! I tried it in the air fryer and it was too dry but never even thought about using the crock pot. Thanks for the suggestion!

It turned out fantastic.....I had some goat cheese at home, do spread that on a cracked and topped with the roasted garlic and was fabulous. I'm going to actually soften the goat cheese, mix it with the garlic and create a "Garluc Cheese Roll" to serve as appetizer. Love it
