Here’s another winner from the slow cooker. This incredibly easy Slow Cooker Caribbean Jerk Chicken recipe results in well-seasoned chicken with just a hint of heat for very little effort.

Simply rub your chicken with a blend of spices and then squeeze on some lime juice. Let your slow cooker do the rest.

After 4 hours in the crock pot on HIGH, this Caribbean Jerk Chicken was juicy and fall-off-the-bone tender. It was well seasoned with just a hint of heat. Perfect for us.

The skin doesn’t get crispy, which is fine because I’m not tempted to eat it, making it easy to save the calories and points 🙂

Q: If you discard the skin on the chicken breast from a whole chicken or rotisserie chicken, does it count 0 points on WW?

A: Yes, According to the WW website, As long as you’re eating the breast meat, removing the skin will keep it 0 Points value.

We enjoyed it served with baked sweet potatoes and broccoli. It would be delicious over rice too. A definite do-over!

Slow Cooker Caribbean Jerk Chicken Recipe

Easy and flavorful this slow cooker caribbean jerk chicken is a winner at our house.

Ingredients 

  • 1 chicken (about 3-1/2 pounds)
  • 1 tablespoon dark brown sugar
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons allspice
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 3 limes, juiced

Instructions 

  • Ideal Slow cooker Size: 6-Quart.
  • Place the chicken in the slow cooker.
  • In a small bowl (affiliate link), mix together the sugar, salt, and spices. Rub the spice mix all over the chicken inside and out.
  • Flip the chicken breast side down to keep the breast meat as juicy as possible while cooking.
  • Pour the lime juice over the chicken.
  • Cover and cook on LOW for 6 to 7 hours, or on HIGH for about 4 hours, until the chicken is done and practically falling off the bone. (Mine was perfect after 4 hours on high.)
  • Remove the skin before serving. Serve with additional lime wedges if desired.

    1. My thought. 2 tablespoons of brown sugar divided by 6 servings = 1 teaspoon per serving. Very little sugar!!

    If you discard the skin on the chicken breast, does it count 0 points on WW? This is a question that I am asking about a lot of recipes using whole chickens?

    1. Hi Rebecca, Yes, according to the WW website when you discard the skin from chicken breast it remains a 0 points food. This would be true for whole chickens, rotisserie chickens, etc. as long as you are eating the breast meat. Hope this helps. – martha

Happy dinner, thank you! *I omitted cayenne & chili powder for better chances kid would try. Ate with sweet potato & broccoli

  3. I’m sorry but this was the worst thing I have ever tasted. I just threw out the whole pot what a waste of chicken. ?

      Sorry to hear that you didn’t like it. My family and I really did, as have other commenters. Further proof that everyone’s tastes are so very different. No one recipe will ever please everybody. Just wondering if there might have been a way to save it from the trash??? When I’ve made chickens that I didn’t like, I’ve been known to remove all the skin and bones and sauce. Shredded the meat. Place it in a colander to give it a rinse and drain and then drown it in a sauce I do like – marinara, teriyaki, salsa, buffalo wing sauce, even ketchup. Just a thought.

    This was fantastic. I used several chicken thighs on the bone rather than a whole chicken. Came out perfectly and falling off the bone. So healthy too! Definitely a keeper!

    I made the slow cooker Caribbean Jerk Chicken last night and I simply had to write to tell you how delicious and EASY it was. It was the best chicken recipe I’ve ever made in the slow cooker. It was amazing. Can’t wait to try your other recipes!
