The prep was minimal—the result fabulous. When I got home I made them several times and now they're a staple at our house.
If you're often rushed in the AM, take 5 minutes the night before to assemble everything and simply light the oven in the morning; 20 minutes later you'll have a high protein, satisfying start to the day.
These Cheesy Baked Ham & Egg Cups are a quick and easy, protein-packed low carb breakfast that can be made ahead in a muffin tin and quickly reheated on busy weekday mornings. Though simple to make, they are elegant enough to serve to guests. Each egg comes in it’s own little cup made of baked ham.

How to Make Skinny Baked Ham and Egg Cups Step-by-Step
Step 1: Line your muffin cups with ham and carefully crack an egg into each ham lined cup.
Step 2: Sprinkle with seasonings of choice: salt, pepper, herbs, grated or shredded cheese, etc.
Step 3: Bake until cooked to your desired firmness.

This quick and easy recipe can be modified in any number of ways to suit your preferences.
- Different Meat: Substitute lean chicken or turkey slices for the ham.
- Add Veg: Add your favorite vegetables before the cracked egg. Defrosted drained frozen spinach and/or chopped roasted red peppers from a jar would be good.
- Cheese Options: Use whatever cheese you prefer. Grated Swiss or Parmesan would be nice as would goat or feta. Or skip the cheese altogether.
- Herbs & Seasonings: Top with whatever seasonings you prefer: salt & pepper, Mrs. Dash salt free seasoning, chopped fresh parsley, cilantro, dill, etc.
If you prefer your egg yolks super runny, you might want to pull them from the oven a minute before you think they're ready. You'll need to let them rest for a few minutes in the muffin tin before taking them out and during those few minutes, the eggs will continue to cook slightly.

Low in carbs, these egg muffin cup treats are a total high protein fix. Include slices of whole wheat, high fiber toast and perhaps a fresh fruit bowl alongside to round out your breakfast. If you're on the run and just want the egg, take along a piece of fruit for the road and morning ahead.

Baked Ham and Cheese Egg Cups
Ingredients
- 6 large eggs
- 6 slices very lean ham
- 6 tablespoons reduced fat shredded cheddar cheese
Instructions
- Heat the oven to 350F degrees. Spray a 6-cup muffin pan with nonstick spray.
- Divide the ham slices into the cups, filling the bottom and sides.
- Crack each egg into a ham lined cup
- Sprinkle each egg with 1 tablespoon shredded cheese.
- Sprinkle any optional seasonings over the top.
- Bake for 15 to 20 minutes or until done to your desired firmness.
- Remove from the oven and let cool 1 minute before removing the eggs from the muffin tin.

I have made these several times, sometimes changing out or adding to the ingredients - you can either add extra cheese, or not; same with peppers or mushrooms, etc. I like to make a variety of them to keep in the freezer - ready to have a quick breakfast or snack while on the run.

For a well-done egg white, I usually cook for 20 minutes. The yolk is still runny. I add chopped fresh spinach before adding the egg. Delicious!
