Combine Friday with pizza and I’m in heaven!
Growing up we often had pizza for supper Friday nights. It was a tradition that I continued through college and into my early working years.

Heck, I love pizza so much I’ve even made it in the crockpot!
Sometimes I satisfy my pizza cravings with lighter, healthier alternatives to traditional pizza that are just as delicious.
I’ve gathered a few of my favorites here for you to check out.
They include pizza-flavored “mini muffin pizza bites,” veggie-crusted pizzas, “English muffin pizzas” and thin crusted pizza flatbreads made from pitas, tortillas, or prepared thin crusts (like boboli or lavosh flatbread).
Even my mom, a huge pizza lover, has started making her own mini pizzas with tortilla crusts at home, instead of heading out to her favorite pizza joint when a craving strikes.

I would love to be completely mobile again so I could travel. Many places I would love to see….but most require a lot of walking and those days are no longer in my life.
What I would do if I could do anything my heart desires is move to be close to my grandkids, who are both in college in NY (we’ve all lived in CA until they went off to school). I’d make sure we had a home there and time to spend. I would also want my son (single dad) to be able to participate. My grandkids would be happy and not so homesick as they periodically get now!!!
Travel all over Great Briton, Australia, New Zealand. I would also begin a non-profit literacy group to assist all ages, including English as a second language. The group would work with anyone who wanted help with classes, soft skills, job hunting, whatever is needed to help them improve their lives. I love helping others.
I would love to open a scrapbook store with my sister.
I would travel the world and find people that are lost in sin and teach them the Gospel and tell them how much Jesus loves them
If nothing stood in my way, I would have buy a house in Hawaii or Puerto Rico and spend the winter months there away from the cold winters here.
If nothing stood in my way, there are so many things I would do. First of all, I would purchase a house for both of my best friends. They have worked so hard in life and deserve something that they can call their own. I love those girls and would do anything for them.
Second, I would open an animal sanctuary for abused or injured animals. I have been an animal lover my whole life. I have said since I was little that would be the one thing I would do….open a rescue and work there.
Lastly, I would travel to Australia. That has been my dream vacation since, well, forever. I want to see Koalas and Roo’s in their natural habitat.
I am sure there are many other things I would do as well, but these are my top 3.
Sell most of my belongings so I could travel, travel, travel. I just never seem to have enough money left over at the end of paying bills to really enjoy my life. I haven’t been on vacation for at least 10 years.
