What Are Hobo Dinner Foil Packets?
Hobo dinners are individual foil packet meals typically made with a protein, vegetables, potatoes, and seasonings all wrapped together and cooked until tender.
The sealed foil packet helps trap steam and flavor, creating juicy burgers and perfectly cooked vegetables with very little effort. They can be cooked:
- In the oven
- On the grill
- Over a campfire
And because everyone gets their own packet, they’re easy to customize for different tastes and dietary preferences.
Ingredients & Substitutions
- Lean ground beef – keeps the burgers flavorful while staying lighter; ground turkey or chicken also work well
- Worcestershire sauce – adds savory depth and classic burger flavor
- Garlic-pepper seasoning – convenient seasoning blend; Montreal steak seasoning or seasoned salt work too
- Onion powder – boosts flavor without extra prep
- Salt – enhances the overall flavor
- Potatoes – thinly sliced so they cook evenly; sweet potatoes are another great option
- Onion – becomes sweet and tender while cooking
- Red bell pepper – adds color and natural sweetness
- Carrot – adds texture and hearty flavor
- Broccoli florets – a nutritious addition that steams beautifully in the packets
- Cherry tomatoes – add moisture and freshness
- Salt and pepper – season vegetables to taste

Step 5: Serve the foil packets directly on plates or carefully transfer the contents to plates. Be careful of the hot steam that will escape when opening the packets.

Recipe Notes
These foil packet dinners are incredibly flexible and easy to adapt based on what you have on hand. The key is cutting vegetables into similarly sized pieces so everything cooks evenly.
Using lean ground beef keeps the meal lighter while still delivering classic hamburger flavor. You can also swap in ground turkey, chicken, sausage, pork chops, or fish depending on preference.
Heavy-duty foil works best, but if using regular foil, simply double layer it to prevent tearing and leaks.

Hamburger Hobo Foil Packets
Equipment
Ingredients
- 1 pound extra lean ground beef
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic pepper seasoning (I used Montreal steak seasoning)
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 2 medium potatoes, peeled and thinly sliced into half moons
- 1 medium onion, peeled and thinly sliced into half moons
- 1 medium red bell pepper, thinly sliced
- 1 large carrot, peeled and thinly sliced
- 1/2 cup broccoli florets
- 1/2 cup cherry tomatoes, sliced in half
- salt & pepper to taste
Instructions
- Preheat your oven to 425°F (218°C).
- In a large bowl combine ground beef with Worcestershire sauce, garlic pepper seasoning, onion powder and salt. Shape the meat mixture into 4 patties, about 1/4 inch thick.
- Cut four sheets of heavy-duty aluminum foil, each about 12×18 inches.
- Divide the vegetables evenly among the four sheets of foil, placing them in the center.
- Place a ground beef patty on top of the veggies.
- Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold. Fold again, allowing space for heat circulation and expansion. Fold other sides to seal. Place packets on large cookie sheet.
- Place the foil packets on a baking sheet (affiliate link) and bake in the preheated oven for 30-35 minutes, or until the beef is fully cooked and the vegetables are tender. (To check if the beef and vegetables are fully cooked, carefully open one of the foil packets and check the internal temperature of the beef with a meat thermometer (affiliate link). It should be at least 160°F (71°C). The vegetables should also be tender.)
- Serve the foil packets directly on plates or carefully transfer the contents to plates. Be careful of the hot steam that will escape when opening the packets
