Seasoned hamburger patties and vegetables wrapped in a foil pack and cooked in the oven (or over a campfire or grill) until done. This easy dinner recipe is a perfect low points way for Weight Watchers to enjoy ground beef patties and their favorite vegetables. I love that this hearty meal is perfectly portion controlled and makes for very easy clean up.
1teaspoongarlic pepper seasoning (I used Montreal steak seasoning)
1/2teaspoononion powder
1/4teaspoonsalt
2mediumpotatoes, peeled and thinly sliced into half moons
1mediumonion, peeled and thinly sliced into half moons
1mediumred bell pepper, thinly sliced
1 largecarrot, peeled and thinly sliced
1/2cupbroccoli florets
1/2cupcherry tomatoes, sliced in half
salt & pepper to taste
Instructions
Preheat your oven to 425°F (218°C).
In a large bowl combine ground beef with Worcestershire sauce, garlic pepper seasoning, onion powder and salt. Shape the meat mixture into 4 patties, about 1/4 inch thick.
Cut four sheets of heavy-duty aluminum foil, each about 12x18 inches.
Divide the vegetables evenly among the four sheets of foil, placing them in the center.
Place a ground beef patty on top of the veggies.
Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold. Fold again, allowing space for heat circulation and expansion. Fold other sides to seal. Place packets on large cookie sheet.
Place the foil packets on a baking sheet and bake in the preheated oven for 30-35 minutes, or until the beef is fully cooked and the vegetables are tender. (To check if the beef and vegetables are fully cooked, carefully open one of the foil packets and check the internal temperature of the beef with a meat thermometer. It should be at least 160°F (71°C). The vegetables should also be tender.)
Serve the foil packets directly on plates or carefully transfer the contents to plates. Be careful of the hot steam that will escape when opening the packets
