Instructions

- Make the sauce: In a small bowl (affiliate link), combine the lemon juice, olive oil, honey, garlic powder, oregano and 1-1/2 teaspoons water. Whisk together with a fork until well blended.
- Spray a skillet with nonstick spray and set over medium-high heat. Add the chicken and onion. Sprinkle with salt and pepper. Drizzle with the sauce. Cook, stirring often, until the chicken is fully cooked and the onion has softened, about 5 minutes.
- Spoon the chicken mixture over the lettuce, cucumber and tomatoes. Top with your favorite dressing.

I made this, but doubled it for the two of us. It was a great dinner! I did crumble some fat-free feta on mine, which my WW app says is 0 pts. Next time I will quadruple the recipe for the sauce and chicken and reserve and store half for another day. It’s that good – I would eat it twice in a week.
