WW Recipe of the Day: Chicken Souvlaki Salad (Single Serving)
This Chicken Souvlaki Salad from the Hungry Girl Fast & Easy Cookbook (affiliate link) is a new favorite.
I love the fresh flavors of Greek and Mediterranean food, like this Skinny Chopped Greek Salad, Vegetarian Greek Quinoa Salad, and Easy Greek 7-Layered Dip. So, I had I hopes for this easy to make entrée-sized salad for one. It exceeded my expectations.
You can use whatever salad dressing you prefer to top this light and tasty Weight Watchers friendly chicken salad. It's especially delicious with skinny creamy cucumber feta dressing.

How to Make Easy Healthy Chicken Souvlaki Salad
Step 1: Gather and prep your ingredients:
- 3 cups chopped lettuce
- ½ cup chopped cucumber
- ½ cup chopped tomato
- 1 tablespoon lemon juice
- 1-½ teaspoons olive oil
- 1 teaspoon honey
- ⅛ teaspoon garlic powder
- ⅛ teaspoon dried oregano
- 4 ounces raw boneless, skinless chicken breast cut into bite-size pieces
- ¼ cup chopped onion
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- Dressing of choice
Step 2: Arrange the chopped lettuce in a serving bowl or on a plate. Top with the chopped cucumber and tomato.

Cooking Notes, Variations & Substitutions
- Use whatever dressing you prefer to drizzle on your souvlaki salad. My dressing of choice is this skinny creamy cucumber feta dressing.
- A sprinkling of crumbled feta cheese, kalamata olives, and/or pepperoncinis would make nice additions, just remember to adjust your WW points accordingly, if that's a concern.
- Opt for bite-size pieces of pork or lamb instead of chicken if you like.
- This makes one satisfying entree salad but can be doubled easily.

Skinny Chicken Souvlaki Salad for One
Ingredients
- 3 cups chopped lettuce
- ½ cup chopped cucumber
- ½ cup chopped tomato
- 1 tablespoon lemon juice
- 1-½ teaspoons olive oil
- 1 teaspoon honey
- ⅛ teaspoon garlic powder
- ⅛ teaspoon dried oregano
- 4 ounces raw boneless, skinless chicken breast cut into bite-size pieces
- ¼ cup chopped onion
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- Dressing of choice
Instructions
- Arrange the chopped lettuce in a serving bowl or on a plate. Top with the chopped cucumber and tomato.
- Make the sauce: In a small bowl, combine the lemon juice, olive oil, honey, garlic powder, oregano and 1-½ teaspoons water. Whisk together with a fork until well blended.
- Spray a skillet with nonstick spray and set over medium-high heat. Add the chicken and onion. Sprinkle with salt and pepper. Drizzle with the sauce. Cook, stirring often, until the chicken is fully cooked and the onion has softened, about 5 minutes.
- Spoon the chicken mixture over the lettuce, cucumber and tomatoes. Top with your favorite dressing.

I made this, but doubled it for the two of us. It was a great dinner! I did crumble some fat-free feta on mine, which my WW app says is 0 pts. Next time I will quadruple the recipe for the sauce and chicken and reserve and store half for another day. It's that good - I would eat it twice in a week.
