WW Recipe of the Day: Skinny Cucumber Feta Dressing

Dressing can make or break a salad. Drizzling on the wrong choice can add hundreds of calories and tons of fat. While there are lots of lighter healthier bottled dressings available, it’s fun and easy to whip them up at home in minutes.

I’m excited to share my most recent discovery—a skinny cucumber feta salad dressing. It’s creamy, light and refreshing with just 1 SmartPoint. Talk about a salad lover’s dream!

How to Make this Light & Healthy Cucumber Feta Dressing

Step 1: Gather and prep your ingredients.

Step 2: Blend together 1/4 cup of the feta cheese and remaining ingredients until smooth.

Step 3: Pour into a bowl or jar and stir in the remaining feta cheese.

Cooking Notes, Variations & Substitutions

The recipe called for fresh garlic and dill. I used what I had on hand instead: granulated garlic and dried dill weed, with great results.

How Long Will Homemade Salad Dressing Last?

Store your dressing in an airtight container in the fridge. I like to use small jam jars. It should stay fresh for about two weeks.

Equipment

Ingredients 

  • 1/2 cup crumbled feta cheese
  • 3/4 cup plain fat free Greek yogurt
  • 1/4 cup seeded, chopped cucumber (patted dry)
  • 2 teaspoons dried dill weed (or 2 tablespoons chopped fresh dill)
  • 1 tablespoon wine vinegar
  • 1/8 teaspoon granulated garlic (or 1 teaspoon chopped fresh garlic)
  • 1/4 teaspoon salt

Instructions 

  • Combine 1/4 cup feta and remaining ingredients in a blender (affiliate link). Blend until smooth and creamy.
  • Pour into a small bowl (affiliate link) or jar and stir in remaining cup of feta.ย
