WW Recipe of the Day: Quick and Light Caesar Dressing
Hail Caesar! It's that time of year when salads and chilled soups are about all I want for lunch.
The classic Caesar salad is one of my top 5 choices. It's the salad dressing and it's usual tasty and but extravagant in terms of calories and fat.
Light Caesar Dressing
What a joy it was to discover this light yet super creamy and luscious recipe that can be made in 5 minutes or less and is good on almost any salad or as a dip.
The key is the low-fat mayonnaise which has the same rich feel as whole egg mayo. Mix it up with mustard, lemon and a little wine and like magic a Caesar salad dressing you'll make again and again.

How to Make this Easy Caesar Salad Dressing
Step 1: Gather and prepare all ingredients.
Step 2: Whisk together all ingredients in a medium-sized bowl, seasoning lightly with salt and pepper.

Step 3: Store in a covered container in the refrigerator for up to 1 week.

The dressing thickens as it stands which makes it even more lush! If it gets too thick, thin with water or a little wine.
This recipe doubles beautifully, so feel free to make a larger batch and store it in a covered container in the fridge.
Dried lemon zest or peel will work with this; make sure to use up to ½ less as it can be more intense in flavor.
Serving Suggestions
Salads meant to be the main course rarely need much except a decent chunk of baguette, or whole wheat loaf, and a refreshing beverage—for summer I usually choose a glass of sauvignon blanc, however iced tea is also a good summer choice.
Ways to Use Leftover Caesar Salad Dressing
Leftover dressing is good on grilled chicken, veggies—we had it over green beans and loved it.
As a dressing for canned or fresh salmon, tuna or steak salad, the is the dressing I'd choose over anything bottled. At just over 30 calories per tablespoon, it's hard to beat in flavor.
