Which means it’s still perfect for enjoying simple no cook recipes like this one for Easy Chilled Cucumber Soup.

It’s light, healthy, flavorful and only requires whisking together 4 ingredients.

The Skinny on Cucumber Soup

This easy chilled cucumber soup is made using prepared tzatziki, a Greek cucumber yogurt dip available in many delis. I found it in the deli section of my favorite supermarket.

If you can’t find tzatziki, substitute a creamy cucumber salad.

Or if you want to make your own, here’s a recipe for fat-free tzatziki from Skinny Taste that looks delicious.

I made this last week for lunch with Peter since he loves tzatziki. Served with little open-faced smoked salmon cucumber sandwiches it made for a light yet satisfying lunch.
