Weight Watchers Recipe of the Day: Chilled Cucumber Soup
(102 calories | *2 WW SmartPoints)
The calendar may say September but temperatures are still scorching hot here in Phoenix.
Which means it’s still perfect for enjoying simple no cook recipes like this one for Easy Chilled Cucumber Soup.
It’s light, healthy, flavorful and only requires whisking together 4 ingredients.
The Skinny on Cucumber Soup
This easy chilled cucumber soup is made using prepared tzatziki, a Greek cucumber yogurt dip available in many delis. I found it in the deli section of my favorite supermarket.
If you can’t find tzatziki, substitute a creamy cucumber salad.
Or if you want to make your own, here’s a recipe for fat-free tzatziki from Skinny Taste that looks delicious.
I made this last week for lunch with Peter since he loves tzatziki. Served with little open-faced smoked salmon cucumber sandwiches it made for a light yet satisfying lunch.
According to my calculations each serving has 102 calories, *3 Weight Watchers Points Plus, *2 WW Freestyle SmartPoints.
I’ll definitely be making this luscious soup again. Enjoy!
