4ouncesraw boneless, skinless chicken breast cut into bite-size pieces
1/4cupchopped onion
1/8teaspoonsalt
1/8teaspoonpepper

Instructions
Arrange the chopped lettuce in a serving bowl or on a plate. Top with the chopped cucumber and tomato.
Make the sauce: In a small bowl, combine the lemon juice, olive oil, honey, garlic powder, oregano and 1-1/2 teaspoons water. Whisk together with a fork until well blended.
Spray a skillet with nonstick spray and set over medium-high heat. Add the chicken and onion. Sprinkle with salt and pepper. Drizzle with the sauce. Cook, stirring often, until the chicken is fully cooked and the onion has softened, about 5 minutes.
Spoon the chicken mixture over the lettuce, cucumber and tomatoes. Top with your favorite dressing.

Use whatever dressing you prefer to drizzle on your souvlaki salad. My dressing of choice is this creamy cucumber feta dressing.
A sprinkling of crumbled feta cheese and/or kalamata olives would be nice on this salad, just remember to adjust your WW points accordingly.
Opt for bite-size pieces of pork or lamb instead of chicken if you like.
