When watermelon is sweet and plentiful, this Easy 2-Ingredient Watermelon Lime Sorbet is one of my favorite summer treats.
All you need is frozen watermelon and a squeeze of fresh lime juice.
That’s it.
No ice cream maker. No added sugar. No dairy.
Just fresh fruit transformed into a cool, refreshing dessert that tastes surprisingly creamy right out of the blender (affiliate link).

Watermelon
Choose a ripe, sweet watermelon for the best flavor. Seedless watermelon is easiest, but any variety will work as long as the seeds are removed.
Fresh Lime Juice
Fresh lime brightens the sweetness of the watermelon and gives the sorbet a refreshing zing. You could also use:
- Lemon juice
- Orange juice
- A combination of citrus juices
Pinch of Sea Salt (Optional)
I almost always add a tiny pinch. It doesn’t make the sorbet salty. It simply enhances the watermelon flavor.
How to Make Easy 2-Ingredient Watermelon Lime Sorbet
Step 1
Cut the watermelon into cubes and arrange in a single layer on a parchment-lined baking sheet (affiliate link). Freeze until completely solid, at least 4 to 5 hours or overnight.

Step 2
Place the frozen watermelon cubes into a food processor (affiliate link) or high-powered blender (affiliate link). Add fresh lime juice and a pinch of salt, if desired

Step 3
Blend until smooth and creamy. You may need to stop once or twice to scrape down the sides. If the mixture seems too firm, let the watermelon sit on the counter for a minute or two before blending again.

Step 4
Serve immediately for a soft sorbet consistency. Or transfer to a freezer container and freeze for another hour for a firmer scoop.

Recipe Notes
This is one of those recipes that barely feels like a recipe.
And yet it always impresses people.
The texture reminds me of a cross between sorbet and a slushy, with a surprisingly creamy mouthfeel considering there’s no dairy at all.
The sweetness will depend entirely on your watermelon, so if yours isn’t especially sweet, feel free to add:
- A teaspoon of honey
- Maple syrup
- Monk fruit sweetener
- Stevia, to taste

Watermelon Mint Sorbet
Add a few fresh mint leaves before blending.
Watermelon Strawberry Sorbet
Replace some of the watermelon with frozen strawberries.
Watermelon Tajín Sorbet
Sprinkle finished sorbet lightly with Tajín for a sweet, spicy, tangy twist.
Watermelon Coconut Sorbet
Blend in a splash of canned light coconut milk for a tropical flavor.

Instructions

- Add sorbet to small bowls and enjoy.
