Mini Pepperoni Pizza Muffins

Recipe Notes

These pepperoni pizza mini muffins are a lighter healthier way to satisfy a pizza craving. I love them dipped in a little warm marinara sauce.

I made them for the first time back in the late 1980s. The recipe is from Connecticut Cooks III (affiliate link), a cookbook published by The American Cancer Society my mom gave me back in 1988. Called “pepperoni puffs” these pizza-like, two-bite snacks were an immediate hit.

I am not sure what caused the recipe to pop into my head, but I immediately ran upstairs, pulled out the cookbook and stirred up a batch. They were as easy and tasty as I remembered. And according to the book’s notes these pepperoni pizza mini muffins freeze well too.

Pepperoni, Shredded Reduced Fat Cheese, Flour, Milk, Egg for Low Fat Pizza Mini Muffins

Recipe Ingredients

  • All purpose flour – My flour of choice for this recipe. You could also use whole wheat pastry flour, white wheat flour or your favorite gluten free flour (affiliate link) blend if you prefer.
  • Baking powder – Gives these little pepperoni puffs their puffiness.
  • Italian seasoning – A versatile herb blend typically includes a combination of dried herbs such as basil, oregano, rosemary, thyme, and marjoram. Some variations may also contain parsley, sage, garlic powder, or crushed red pepper flakes.
  • Non fat milk – Feel free to substitute your favorite nondairy milk alternative if you like.
  • Egg – Helps these little mini pepperoni muffins bind and hold their shape.
  • Reduced fat grated cheese – I used a combination of mozzarella and Parmesan but choose whatever single cheese or blend you have on hand.
  • Low-fat turkey pepperoni – Lower in fat and calories compared to regular pepperoni, it is my go-to when I want the flavors of pepperoni with fewer calories and WW Points.

  1. Question: Is the reduced fat grated cheese the “powdery” kind in the canister or fresh cheese that you grate yourself?

    1. Hi Bev, I usually opt for the kind you grate yourself, but either one should work. Hope this helps. ~Martha

  2. How could I modify this recipe for use with regular sized muffins? I find using 3 mini-muffin pans too tedious for me ๐Ÿ˜‰

    1. Hi Susan, I’ve only make the as mini muffins pizzas so I’m guessing here a little bit. Fill regular greased muffin pans 3/4 full and cook until golden and springy to the touch, about 30 – 35 minutes. Hope this helps. ~Martha

  3. Awesome recipe, thanks for sharing this one! Didnt have the mini muffin tins so used the large 12 cup tin and cooked for approx. 35 min @ 350 which worked out to 3 points per muffin! I added a little garlic powder, salt and pepper to this recipe and it was fantastic! Also found a points friendly pizza sauce which I spruced up with some seasoning. ๐Ÿ™‚

    1. Hi Shirley, Honestly, I haven’t made them ahead. I think they should work being frozen and then gently reheated. Hope this helps.

  4. 5 stars
I made these a few days ago and I’ve been enjoying 4-5 with my lunch alongside some steamed veggies and a salad. They are awesome!! I did find them to be a bit dry without the marinara (I don’t like red sauce), so I have been mixing garlic into whipped cream cheese and topping each mini muffin with a little bit. I will be making these again!

    1. Hi Caity, Thanks for taking the time to let me know! Love your idea of spreading them with garlic cream cheese. Yum!
