Dinner doesn’t get much easier — or more fun — than this Impossibly Easy Bisquick Turkey Taco Pie. As it bakes, the Bisquick mixture works its magic, creating a light crust that holds the taco-spiced turkey and green chile filling together. Add a little melted cheese on top, and you’ve got a simple, satisfying meal the whole family will love.
One of my favorite parts is how customizable it is. Once the pie is baked, everyone can top their slice however they like. Keep it classic with shredded lettuce and salsa, or go all out with jalapeños, guacamole, sour cream, and extra cheese for a nacho-style twist.

Why You’ll Love This Easy Turkey Taco Pie
- Comfort food made easy – the Bisquick “impossible” crust bakes up like magic.
- Simple and satisfying – just a few basic ingredients come together in minutes.
- Family-friendly – everyone can add their favorite toppings to make it their own.
- WW-friendly – lighter than traditional taco bakes but still cheesy and delicious.
- Versatile – easy to swap proteins, add veggies, or adjust the spice level.
Ingredients
- Lean ground turkey – a lighter protein base for the taco pie. You can swap in ground chicken or lean ground beef if you prefer.
- Onion – adds flavor and texture. White, yellow, or even green onions will work here.
- Taco seasoning mix – gives the filling classic Tex-Mex flavor. Use a store-bought packet or make your own with chili powder, cumin, paprika, garlic powder, and oregano.
- Chopped green chilies – for mild heat and extra flavor. You can substitute with jalapeños, bell peppers, or leave them out if you prefer less spice.
- Bisquick Heart Smart Baking Mix – creates the “impossible pie” crust that magically forms while baking. Regular Bisquick or a homemade baking mix can also be used.
- Milk – skim milk keeps it light, but any dairy or unsweetened non-dairy milk (like almond or oat) works too.
- Eggs – help bind the pie together while it bakes.
- Shredded cheese – Pepper Jack, Monterey Jack, or Cheddar add a melty, savory topping. Use reduced-fat cheese to keep it WW-friendly.

Step 3: Cook the Turkey. In a skillet over medium heat, cook the turkey and onions until the turkey is no longer pink. Drain off any excess liquid. Stir in taco seasoning and mix well.

Step 4: Add the turkey to the pie dish. Spread meat in prepared pie dish. Top meat with green chilies.

Step 5: Mix up the Topping. In a mixing bowl, stir together the baking mix, milk and eggs, just until blended. Pour over meat and chilies in pie dish.

Step 6: Bake for 25 minutes, or until knife inserted near center comes out clean.
Step 7: Sprinkle shredded cheese over the top and bake an additional 2 to 3 minutes, or until cheese is melted.

Step 8: Remove from oven and let stand at least 5 minutes before cutting into 6 equal wedges.

Serve with your favorite taco toppings: shredded lettuce, chopped tomatoes, shredded cheese, jalapeños, sliced green onions, salsa, sour cream, guacamole, etc.

Recipe Notes, Additions and Substitutions
- Cheese: I used reduced-fat Pepper Jack, but any shredded cheese (like Monterey Jack, Cheddar, or a Mexican blend) will work.
- Protein: Ground turkey keeps this light, but ground chicken, pork, or lean beef are all great options. Vegetarian-friendly swaps include plant-based crumbles or black beans.
- Baking mix: You can use store-bought Bisquick or make your own with my easy Homemade Bisquick replacement (just 4 everyday ingredients!).
- Veggies: Stir in extras like corn, black beans, or bell peppers for more flavor and texture.
- Spice level: Use mild green chilies for a gentle kick, or swap in jalapeños or hot sauce if you like more heat.
- I used reduced-fat Pepper Jack Cheese, but you can substitute your favorite shredded cheese or blend.

We liked the taco pie but it was bland. Not sure I’d make again. Sorry
Do you mix the Taco seasoning in dry or follow the directions on the package and add the water? Didn’t say so I followed the directions on the package and when I poured in the bisquick mix the liquid from the taco seasoning came to the top. It was very good though I just want to make sure for the next time I make it.
Hi Tammy, Just mix the taco seasoning in dry for this recipe. Hope this helps. ~Martha
I made this today in my electric frypan. Worked out great and didn’t heat up the house by turning the oven on! Still a favorite of my “Martha recipes”. Soooo tasty!!!
I’m excited to try this. I wonder if I could substitute the Bisquick for WW cornbread?
