WW Recipe of the Day: Low-Fat Southern Kielbasa, Bean, & Bacon Soup
In her cookbook Paula Deen Cuts the Fat (affiliate link), she has taken many of her favorite classic southern recipes and made them lighter and healthier. This skinny Southern kielbasa, bean and bacon soup has a hint of sweetness from the baked beans, making it easy for Weight Watchers of all ages to love.
Low Fat Southern Kielbasa Bean & Bacon Soup
Try using kale or a heartier greens (like collards, turnip, or dandelion).
To keep it vegetarian, remove the turkey bacon and sausage. Use a tablespoon of olive oil when sautéing the vegetables and double up on the pinto beans.

How to Make This Low-Fat Soup, Step-by-Step
Step 1: Gather and prepare all ingredients.

Step 2: In a medium to large saucepan, add the bacon, onion, bell pepper and celery.

Cook until soft over medium heat, stirring frequently (about 7 minutes).
Step 3: Stir in the garlic and tomato paste. Cook for one minute.

Step 4: Add the baked beans, pinto beans, sausage, and water. Stir to combine and let simmer for 15 minutes over medium heat.

Step 5: Add the milk and stir. Continue to simmer for 10 more minutes.

Step 6: Add the spinach, or greens, and continue to cook for 5 minutes.

Recipe Notes
- Substitute lean ham or Canadian bacon for the turkey bacon.
- Use your favorite type of greens in place of spinach.
- Make it dairy-free and replace milk with unsweetened plain nut or soy milk.
- Use two cups of water instead of the milk for a less creamy option.

Skinny Southern Kielbasa, Bean & Bacon Soup
Ingredients
- 2 slices turkey bacon, cut into ½-inch pieces
- 1 small onion (about 1 cup)
- 1 green bell peppers, seeded and chopped
- 1 celery stick, chopped
- 2 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 can (14 to 16 ounces) vegetarian baked beans
- 1 can (15.5 ounces) pinto beans, drained
- ½ pound turkey kielbasa, or smoked sausage, cubed
- 1 cup water
- 1 cup 2% milk
- 6 cups spinach, or mustard greens, chopped
- Black pepper, to taste
