Skinny Slow Cooker Italian Pork Roast
Ingredients
- 2 pounds lean boneless pork roast (sirloin or tenderloin)
- 28 ounces canned diced tomatoes, undrained
- 1/2 cup grated Parmesan cheese
- 1 tablespoon parsley
- 1 teaspoon garlic powder (substitute 3 to 4 cloves fresh minced garlic if you prefer)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
Instructions
- Ideal Slow Cooker Size: 4 to 5-Quart
- Place the pork in the slow cooker.
- Combine the tomatoes, cheese, parsley, garlic, basil, oregano and pepper and pour over the pork.
- Cover and cook on LOW for 6 to 8 hours, or until the pork is fork tender.

Will the dish be affected if cooked in a 6 qt slow cooker? I see that it calls for a 4 qt, ideally.
