WW Recipe of the Day: Skinny Grilled Cheese and Tomato Soup Sandwiches
Growing up one of my favorite meals was grilled cheese sandwiches and Campbell's tomato soup. They were a match made in heaven.
This recipe takes those same flavors and turns them into a simple healthy low-calorie sandwich. Make it extra fun by cooking it in a waffle iron (affiliate link). Kids of all ages will love it.

Any type of relatively thin hot sandwich, including this grilled cheese, can be made in a waffle iron (affiliate link), as this recipe proves! Of course this tasty tomatoey grilled cheese can also be made on the stovetop in a nonstick skillet.
How to Make Skinny Waffle Iron Tomato Soup Grilled Cheese Sandwiches
Step 1: Gather and prepare all ingredients.

Step 2: Add the first 6 ingredients in a small bowl (affiliate link) and mix well.

Step 3: Spread 1 rounded tablespoon of the cream cheese mixture onto 4 slices of bread.

Step 4: Top each with a slice of American cheese.

Step 5: Add the remaining bread to make a sandwich.
Step 6: Lightly spray both sides with cooking spray.
Step 7: Cook in a waffle iron (affiliate link) on medium for 5 minutes, or until golden brown.

Or if you prefer, use a non-stick skillet over medium high heat. Cook for 2-3 minutes each side, or until golden brown.

If you prefer, you can turn this into a recipe for 1. Here's what you'll need:
- 1 tablespoon light cream cheese
- ½ tablespoon tomato paste
- ¾ teaspoon Italian seasoning
- Large pinch each of sugar, salt, black pepper and garlic powder (if using).
- 1 slice reduced fat American cheese
- 2 slices light bread
Variations & Additions
- Substitute dried oregano or basil for the Italian spice blend.
- Replace the sugar with a pinch of stevia or your favorite non calorie sweetener.
- Swap out the American cheese for fresh mozzarella, provolone, cheddar or the cheese of your choice. (Remember to adjust SmartPoints accordingly.)
- Make vegan by using plant based cheese.
- Add some jarred roasted red peppers.
- Sprinkle some crushed red pepper flakes on the cream cheese mixture to add a little heat.
- Add a few slices of roasted vegetables (thin slices or grilled or roasted zucchini or eggplant would be good.)
