Growing up one of my favorite meals was grilled cheese sandwiches and Campbell’s tomato soup. They were a match made in heaven.

This recipe for Tomato Soup Grilled Cheese Sandwiches takes those same flavors and turns them into a simple healthy low-calorie sandwich. Make it extra fun by cooking it in a waffle iron (affiliate link). WeightWatchers of all ages will love it.

Ingredients and Substitutions

  • Light cream cheese – the base for the tomato soup spread.
  • Tomato paste – I like the kind in a tube.
  • Dried Italian spice blend – Dried oregano or basil would also work.
  • Granulated sugar – Substitute a pinch of stevia or your favorite non calorie sweetener if you prefer.
  • Black pepper – Just a bit to season the tomato soup spread.
  • Garlic powder (optional) – I like roasted granulated garlic here.
  • 2% milk American cheese singles – Feel free to swap out the American cheese for fresh mozzarella, provolone, cheddar or the cheese of your choice. (Remember to adjust WW Points accordingly.)
  • Light white or whole wheat bread – There are so many options from which to choose. Use whatever bread you like best.

Variations and Additions

  • Make vegan by using plant based cheese.
  • Add some jarred roasted red peppers.
  • Sprinkle some crushed red pepper flakes on the cream cheese mixture to add a little heat.
  • Add a few slices of roasted vegetables (thin slices or grilled or roasted zucchini or eggplant would be good.)

Can I Use a Waffle Iron as a Panini Press?

Any type of relatively thin hot sandwich, including this grilled cheese, can be made in a waffle iron, as this recipe proves!  Of course this tasty tomatoey grilled cheese can also be made on the stovetop in a nonstick skillet. 

How to Make Lighter Healthier Waffle Iron Tomato Soup Grilled Cheese Sandwiches

Step 1: Gather and prepare all ingredients

Step 2: Make the Tomato Soup Spread

Add the first 6 ingredients in a small bowl (affiliate link) and mix well.

Step 3: Spread the tomato spread on the bread

Spread 1 rounded tablespoon of the cream cheese mixture onto 4 slices of bread.

Step 4: Make the sandwiches

Top each with a slice of American cheese. Add the remaining bread to make a sandwich.

Step 5: Cook the sandwiches

Lightly spray both sides with cooking spray. Cook in a waffle iron on medium for 5 minutes, or until golden brown.

Or if you prefer, use a non-stick skillet over medium high heat. Cook for 2-3 minutes each side, or until golden brown.

Ways to Use Leftovers

  • Extra tomato cream cheese mixture can be used as a sandwich spread.

    These were a hit tonight. I only adjusted the seasonings. Picky eater husband ate. 2 sandwiches. These will be on the rotation.
