WW Recipe of the Day: Cranberry Chocolate Truffles
These skinny cranberry chocolate truffles are a delicious lighter healthier way to indulge your chocolate cravings without blowing your Points budget.
And with just 4 ingredients—dried cranberries, old fashioned oats, hot fudge sauce and unsweetened cocoa powder—these no-bake bites are a snap to make.
The oats and cranberries make these treats more chewy, and therefore more satisfying than your typical chocolate ganache truffle.
As you can imagine, they were a hit with me and my chocolate loving family.

How Many Calories and Points in these Truffles?
According to my calculations, each truffle has about 55 calories and:

How to Make Chocolate Dessert Truffle Bites
Step 1: Gather and prepare all ingredients.

Step 2: Place the dried cranberries in the bowl of a mini food processor (affiliate link) fitted with a chopping blade. Process until they are very finely chopped and sticking together.

(Alternatively, you can use a blender (affiliate link). I used my Vitamix (affiliate link) with great success.)
Step 3: With a spatula, transfer the cranberries to a small mixing bowl. Add the oats, hot fudge and 1 tablespoon of the cocoa powder. Using your hands, or an electric mixer (affiliate link), mix until thoroughly combined.

Step 4: Place the remaining 2 teaspoons of cocoa powder in a small shallow dish.
Step 5: Working quickly so the fudge doesn’t melt, divide the mixture into 6 equal parts that are about 1 tablespoon each.

Carefully form each into a ball.

Step 6: Roll each ball in the cocoa powder until evenly coated. When all the balls have been coated with the cocoa, place in a sieve and carefully bump the side of the sieve with the palm of your hand to shake off excess cocoa powder—otherwise if there is too much cocoa powder the first bite will be bitter!

Step 7: Serve immediately or refrigerate in an airtight container lined with wax paper for up to 1 week.

The recipe for these skinny cranberry chocolate truffles is adapted from one for chocolate cherry truffles in the The Biggest Loser Family Cookbook: Budget-Friendly Meals Your Whole Family Will Love (affiliate link), which called for dried cherries, which tend to be expensive. Since I always have Craisins on hand, I decided to use them instead.
