This easy taco soup is one of my go-to recipes when I want something quick, filling, and made from ingredients I almost always have on hand. It works equally well with ground beef or ground turkey, and it’s been a family favorite for years. My mom loves it too.
It’s the kind of simple soup that fits easily into everyday life.

Ingredients and Substitutions
- Lean ground beef – (At least 95% lean for 0 WW Points.) You can also use ground turkey.
- Onion – Adds flavor to the soup base. I like to keep chopped onions in the freezer to make this soup even easier.
- Canned Mexican-style diced tomatoes – You can also use regular diced tomatoes and add a pinch of chili powder or cumin.
- Canned beans – Kidney beans, pinto beans, black beans, or chili beans all work well.
- Canned corn – Frozen or fresh corn are other good alternatives.
- Canned tomato sauce – Substitute crushed tomatoes if you want.
- Reduced-sodium taco seasoning – You can also use homemade taco seasoning if you prefer.
Optional Toppings
Avocado, light sour cream or plain nonfat Greek yogurt, reduced-fat shredded cheese (cheddar, Monterey Jack, or Mexican blend), fresh cilantro, lime wedges, and tortilla chips.

How To Make Easy Taco Soup Step by Step
- Lightly coat a large soup pot with cooking spray and heat over medium-high.
- Add the ground beef and break it up, stirring briefly.
- Stir in the onion and cook until the beef is browned and the onion is soft.
- Add the tomatoes, beans, corn, tomato sauce, taco seasoning, and a can of water. Stir well.
- Bring the soup to a boil, then reduce the heat, cover, and let it simmer gently.
- While the soup cooks, prepare any toppings you plan to use.
- Serve hot and let everyone top their bowl as they like.
- If you prefer a thinner soup, you can add a little extra water or broth.

Fresh lime and cilantro are easy to find where I live, but the soup is still delicious without them.

Ingredients
- 1/2 pound lean ground beef
- 1 cup chopped onion (about 1 medium-size onion)
- 1 can (14.5 ounces) Mexican-style diced tomatoes, undrained
- 1 can (15.5 ounces) beans (kidney, pinto, black or chili), undrained
- 1 can (11 ounces) corn, undrained
- 1 can (8 ounces) tomato sauce
- 1 package (1.25 ounces) reduced sodium taco seasoning
Optional Toppings
- 1 avocado, peeled and cut into cubes
- 1 cup light sour cream or Greek style yogurt
- 1 cup low fat pre-shredded cheese (Cheddar, Jack or Mexican blend)
- 1/4 cup fresh cilantro sprigs
- 1 lime, cut into 8 wedges
- Crushed tortilla chips
Instructions
- Spray a large sauce pot (4 quart) with cooking spray and place it over medium-high heat.
- Add the ground beef and break it up with a wooden spoon (affiliate link), stirring for about 1 minute.
- Stir in the onion and continue to cook, stirring often, until the ground beef is brown all over and the onion is soft, about 4 to 5 minutes.
- Stir in the tomatoes, beans, corn, tomato sauce and taco seasoning. Fill the can of tomato sauce with water and add it to the pot too. Stir well. Allow the soup to come to a boil and then reduce the heat to low, cover the pot and let the soup bubble gently for 15 minutes.
- While the soup is simmering, prepare your optional toppings.
- To serve, ladle the hot soup into serving bowls and pass around the avocado cubes, sour cream, cheese, cilantro, lime wedges and tortilla chips so everyone can top it just the way they like it.
