WW Recipe of the Day: Belvita Strawberry Dessert Bruschetta
My mom, sister and I are spending the 4th of July holiday on the coast of Maine, about as far away from the intense heat of Phoenix as you can get.
We are looking forward to a week of relaxing, catching up with family and friends, and indulging in lots of fresh Maine seafood.

I'm sharing a recipe for a quick and easy strawberry dessert with just 5 ingredients: Belvita golden oat breakfast biscuits, light cream cheese, lemon curd, chopped strawberries, and fresh mint.

You could even make these red, white and blue by adding a few blueberries and skipping the mint!

I got the idea for these easy and fun strawberry dessert bruschetta in the Winter 2013 issue of Weight Watchers Five Ingredient 15 Minute Recipes, which I picked up at Costco months ago and just recently rediscovered in my ever-growing, unwieldy stack of cooking magazines.

This sweet twist on the savory appetizer is perfect when you need a quick and easy dessert (or breakfast or snack) that's as beautiful as it is delicious.

With strawberries and cream cheese in the refrigerator, Belvita golden oat breakfast biscuits and an unopened jar of lemon curd in the pantry and a pot of mint on the patio, I had everything I need to whip up a batch of these strawberry dessert bruschetta recently.
Strawberry Dessert Bruschetta
Originally written to be used with rectangular sugar cookies, I thought Belvita breakfast biscuits would be a good substitute.
Made with whole grains, Belvita biscuits are a pretty good choice as cookies go, but they're not something that work for me at breakfast, so I tend to eat one or two occasionally as an afternoon treat.
The original recipe was written to make 16 servings, way too many for our little family, so, I made one-quarter of the recipe, a much safer amount for a food-greedy girl like me.

Weight Watchers Belvita Strawberry Dessert Bruschetta Recipe
Ingredients
- 4 Belvita golden oat breakfast biscuits
- 2 tablespoons tub-style light cream cheese
- 1-½ teaspoons lemon curd
- ¼ cup chopped strawberries
- Fresh mint sprigs, roughly chopped (optional)
Instructions
- In a small bowl, combine the cream cheese and lemon curd until creamy and well blended.
- Spread about ¾ tablespoon of the cream cheese mixture on one side of each of the cookies.
- Top evenly with the strawberries.
- Garnish with mint if desired.
