WW Recipe of the Day: Salmon Egg Asparagus Salad
I got the idea for this salmon salad after seeing Gina’s Asparagus Egg Bacon Salad on SkinnyTaste. I made a few changes so it would work with what I had on hand: leftover roasted asparagus and a pouch of pink salmon.
By using bottled vinaigrette and adding a couple handful of mixed greens, I was able to toss this salad together in minutes for a quick and easy lunch last week. It would be even better with homemade salad dressing and leftover grilled, broiled or baked salmon.

Different Fish
Substitute canned tuna, salmon patties or leftover cooked fish of your choice. Leftover chicken or turkey would work too.

Skip the fish.

Most any vegetable will work, green beans, broccoli, red bell pepper, tomatoes, olives, zucchini, artichoke hearts, etc.

Salmon Egg Asparagus Salad
Equipment
Ingredients
- 2 cups salad greens
- 1 tablespoon light vinaigrette dressing
- 1-1/2 cups chopped roasted asparagus
- 1 large hard boiled egg, peeled and sliced
- 1 pouch (2.5 ounces) salmon, flaked
- Salt and freshly ground black pepper to taste
Instructions
- Toss the greens with half the vinaigrette and place them in a bowl.
- Top greens with the asparagus, salmon and sliced egg.
- Drizzle with the remaining vinaigrette and season to taste with salt and pepper.
