I'm excited to share this easy healthy breakfast idea - a toasted whole grain waffle topped with lemony ricotta and fresh blueberries. As soon as I saw it on WW Facebook page I decided I needed to try this recipe ASAP. I'm so glad I did.
This satisfying breakfast comes together in less than ten minutes with just a handful of ingredients. Adding a little lemon and sugar to the ricotta is the secret to its success.
I loved the waffle topped with fresh blueberries, but plan to try it with strawberries and blackberries too.
While this recipe is written to serve one, you can easily double or triple the ingredients to make more.

With 140 calories in a ½ cup of part skim ricotta cheese, this delicious dairy product makes a great addition to a healthy weight loss diet. In addition to being relatively low in calories, ricotta is also high in protein (12g) and boasts all nine of the essential amino acids that your body needs.
How to Zest a Lemon?
This recipe calls for a small amount of lemon zest. I always use my microplane grater for zesting a lemon. If you don't have one here's a great video with 5 different ways to zest one:
How to Make This Easy Healthy Waffle with Lemon Ricotta + Blueberries
Step 1: Gather and prep your ingredients
- 3 tablespoons part-skim ricotta cheese
- 1-½ teaspoons confectioner's sugar
- ½ teaspoon finely grated lemon zest
- 1 teaspoon fresh lemon juice
- 1 whole-grain waffle, toasted
- ½ cup fresh blueberries

Step 2: Combine ricotta, sugar, lemon zest, and juice in small cup. Stir until well combined and creamy.

Ingredients
- 3 tablespoons part skim ricotta cheese
- 1-½ teaspoons confectioner's sugar
- 1 teaspoon fresh lemon juice
- ½ teaspoon finely grated lemon zest
- 1 wholegrain waffle, toasted
- ½ cup fresh blueberries
Instructions
- In a small bowl, stir together the ricotta, sugar, lemon juice and lemon zest until well combined and creamy.
- Spread over or dollop onto the toasted waffle.
- Top with the blueberries
